A sweet and healthy seasonal breakfast recipe for a lazy and cold weekend morning! Banana Pumpkin Pancakes that are gluten-free, vegan, and nut-free making them perfect for any hungry mouth that needs feeding!
I like to balance my pumpkin out with a few other things. Not to let it be outshined during PUMPKIN season, but just because it is the season of the orange orb doesn’t mean we can just forget about all other food perfections. Now, I do have a multitude of pumpkin pancakes that are ready for devouring, but we can never have too many, so another one it is!
Combining our seasonal favorite and the classic banana pancake favorite seemed like a rather enticing idea, don’t you think? Pumpkin and banana always make magic in vegan and gluten-free “baked” goods. They add that perfect creamy moisture as well as act as one of the best “egg” binders. I feel like I’ve experimented with everything under the sun when making pancakes. The amount I eat? It’s a typical assumption and now a fact that I like to play around with new combinations.
While we’re talking about trying new combinations, let’s all take a moment to appreciate my first Gif! This was a new and fun “combination” that I will be repeating! This banana pumpkin pancakes recipe is over 2 years old actually, but I reshot it this past summer. While I was shooting I decided to play around with some pouring action and ended up with some perfect “gif-able” images to mash together!
Maybe this was the first step to video creation? This was rather hard, okay, maybe not hard, but “cumbersome” to do. I used my tripod but still don’t think I can handle actually recording something. I think I’ll stick with perfecting Gifs before I move on to the big-bad video anytime soon! I bet some of you are shaking your heads at me but at least now I have the excuse of being back in school and having even less time to try recording! Haha!
I also bet some of you are shaking your heads because you think recording a video is easier than making pancakes! Well, I beg to differ. It may be just one of those talents you’re born with. You’re either good at making videos or you’re good at making pancakes. When it comes down to it all, I’m glad I have the pancake-making gene! Perfect fluffy gluten-free and vegan cakes every time! Pancakes over videos. Really? Is that even up for debate?
Banana Pumpkin Pancakes
- In a bowl, combine all ingredients and mix until you have a slightly thick pancake batter.
- Heat a greased non-stick pan over medium-high heat.
- Once hot, add half the batter the pan to form one pancake. Cook for about 3 minutes, flip, and cook for 2-3 more minutes. Repeat for the last half of the batter.
- Top your cake with pure maple syrup if desired!
Anyone else enjoy drowning their pancakes in toppings? I used maple syrup here (for the photogenic qualities), but I usually drown my pancakes in mint chocolate and plain chocolate stevia syrup. The best! I guess that’s another area of my pancake making and combining where I go a little far out there. Mint chocolate and pumpkin and banana? Why not! As long as the cakes are fluffy and the there’s a pool of sweet goodness surrounding the plated cakes, I’m good!
