DONE! (Well...almost!) Classes are over and now I just have 2 tests next week. One is a "final" but barely and the other is just a normal test like usual. I have my final presentation yesterday, all was well and easy, so I'm feeling good! I came out alive and now we're looking ahead to college year 3. It's funny how summer loses it's touch a bit once you're out of lower education schooling. I mean, I still feel the "yay summer", but to a lesser degree. O, the things we lose as an "adult".
In other news, did you know (you should by now if you've been a long time reader), that May is Celiac Disease awareness month and food allergy awareness week is May 8th-14th? I'm totally dropping the ball on this one and haven't planned anything (yet!). Do you have and requests for posts, tips, guides to anything Celiac or food allergies? Let me know! But I may have a few sneaky giveaways on various social media or via newsletter this month, so be on the look out! So now as I go off to "study" for my "non-final" finals, you can take a few moments and browse this week's Finisher! Happy Friday gluten-free foodies!

parents on social media can be weird 😀 Thankfully my parents don't use any of it. Neither am I on snapchat, I try not to use too many social platforms because I'm spending too much time on them already. Good luck on the last 2 tests ^.^ Yay, holidays 🙂
Rebecca @ Strength and Sunshine
Hahaha, my parent's are pretty "hip". My mom only has FB, my dad only has...snapchat....that's why it's weird!
Amen to that! I have enough and I can't even keep up!
And thank you my friend! xoxo
Michelle @ Vitamin-Sunshine
I have worked in a school since I finished college... so I still have summer vacations. Sometimes it makes me feel like I never grew up!
Thanks for the great reading-- peanut allergy toothpaste is open. Hmm...
Rebecca @ Strength and Sunshine
Haha! My mom always liked when she worked in the shcools because of all the "normal" breaks too 😛
Tara | Treble in the Kitchen

I am off to explore all those fabulous dishes you have introduced us to. My mouth is watering in anticipation. Or maybe I need breakfast first, lol. Great post 🙂

I hope you've had a loveeeeeeeeely weekend! I'll be thinking of you with those tests this week - I'm sure you'll ace them! 😉
Why is peanuts in coke a thing? Who does that?! Or that garbage plate..... that does not look edible.
Rebecca @ Strength and Sunshine
Why would one even think to put peanuts in coke? Like....I love peanuts....but soggy, toxic soaked? Nah!
Mandy
Yay!!! Congrats are being (almost) done! So true, summers as a kid were the best - no school or work!
OMG. The 25 weirdest foods should be the grossest foods! I about gagged looking through the photos and descriptions...I don't quite consider Twinkies to be weird...they seemed out of place on that icky list! Anyways, as always, I love these Friday posts - I'm sorry that I'm soooo behind on your blog! Hope you're having a good weekend <3 xo
Rebecca @ Strength and Sunshine
Thank you Mandy! xoxo
Right? I mean...a twinkie does not compare to nay of those!
Haha, I hope you are too! xoxoxo
Kristina @ Ms.Modify
I'm new to your blog and so happy I found it! I also have celiac and I blog, so we have things in common! All those food pics are making me hungry, and I just ate! Ha
xo, Kristina

Haha, thanks, well enjoy Strength and Sunshine!
Ellen @ My Uncommon Everyday
Those ice cream sandwiches sound completely incredible! And I definitely remember mall teriyaki chicken. I would venture to say that, addictive as that stuff is, the above recipe is much tastier 🙂 I worked a part-time job last summer and I'm interning this summer. Enjoy the last week or so of your second year!
Rebecca @ Strength and Sunshine
Hahaha I might agree 😉 We need to make some!
Thank you Ellen!

I had to laugh at the eat a pickle a day...my daughter is a pickle addict. I wish she would limit to just one a day.
Rebecca @ Strength and Sunshine
No limits!! Pickles are so good (and good for you!!!) Hahaha! 😉

Sarah
Yeah for school almost being done! Umm 2 tablespoons for nut butter seriously that is so 1950's or something because I don't know anyone who follows that serving size!
Had to giggle at the SnapChat because I don't have it, I did over a year ago for a brief time but not a fan. My brother in law got the kids signed up on it and yeah I don't need a million goofy snaps a day but apparently he does. Too bad they only stuck with it for a week and got bored because that would have been sweet revenge for them to be snapping (um is that what it's called because I figured twitter is tweeting) all day long.
Rebecca @ Strength and Sunshine
It's stupid to even put that on a label 😛 Same with cereal, haha! Do you know how small 3/4 cup is!?
Hahahaha! I just don't understand the purpose 😛 Social media is NOT my thing! I don't want even more!
Trish R
I worked on summer breaks from school ... and I enjoyed the change of pace every single year. Happy Friday and happy weekend to you!

You too!

So many great links to read! Congrats on {almost} being done with your 2nd year of college 🙂 Happy {almost} Celiac Awareness Month!!
Rebecca @ Strength and Sunshine
Haha, thanks, my friend 😉
Natalie | Feasting on Fruit
I'm not sure if the coffee xantham gum trick is crazy or brilliant...both probably, but I kinda want to try it. And that fresh coconut limeade sounds lovely, if only I had a coconut! Woohoo congrats on being SOOO close to the end of the semester, summer vibes coming soon!!
Rebecca @ Strength and Sunshine
It sounds pretty nifty!
Have you ever bought a whole coconut? I always see them (by the plantains and yucca) but they're big brown and scary!)
Thank you!
Natalie | Feasting on Fruit
Nope. I've bough a half coconut one time which was way easier because you don't have to break it open yourself. And I've bought the young thai ones but that is all. I have enough trouble opening the young ones, I can't imagine hacking into one of the brown ones!
Michele @ paleorunningmomma
Glad you're just about done - great feeling! I worked every summer either at a restaurant, retail, or internship except for a summer before grad school when I taught myself how to cook. Turns out that was a pretty good idea I guess!
Rebecca @ Strength and Sunshine
Bahaha, yes!!! Sometimes the least likely things are the best decisions!
Farrah
Yay! Good luck on your tests! 😀 (Non-final finals are awesome. <3) Can't wait to check these out--I need to make my own produce bags! :]!
Rebecca @ Strength and Sunshine
Haha, thanks Farrah!
Isn't that such a great idea!?
