Happy 4th of July! How are you celebrating your American pride today? We have nothing planned, but maybe some grilling later? Chicken burgers? Portobello Burgers? Hmm, maybe a good old Chickpea Burger? The possibilities are endless 😉 But I think I might just go with a grilled chicken breast. Nothing fancy, but it does the job! Plus I don't have many recipe making resources right now since we didn't really get groceries for this week because we were away. However, tomorrow, I need to stock up!
I've been relaxing and going with the flow these last few days and it is just what I needed. Each day I am getting back to normal and finding my inner-peace again 😉 Yesterday was really goo so hopefully the good stuff keeping flowing into today! I'm looking forward to a nice chill weekend as well. Yoga and some quality reading time are calling my name. I just started the book Salt, Sugar, Fat by Micheal Moss. "How the Food Giants Hooked Us." I love these kind of food politic/nutrition books. So far so good! Sometimes you need some quality non-fiction reading to increase the knowledge 😉

+ Coffee. My new love is going strong. Maybe a bit too strong. Thursday morning I went on a coffee run for my second ever iced black unsweetened coffee. I sucked that baby down in 20 seconds flat. It was a medium too. And then I realized I forgot to say decaf. Now I really never have caffeine except those special times I risk it and have some caffeinated tea. Well a medium coffee for a girl who has not had it in 8 years. Haha, let's just say I was jumping off the ways. My brain felt like it was bouncing around in my head. Crazy! So I channeled that shaky jitteriness into some new granola making! A good morning it was indeed! (...my stomach was not my friend later, but, dare I say it may have been worth it...just not again for awhile!)

We didn't have any plans either. Holidays with no plans usually turn out being the best ones. We just stayed home and enjoyed each others company. Great collection of links! I particularly enjoyed The Introvert's Guide to Blogging and Why We Stay in Crappy Situations. And the coconut bars look tasty and easy to make.

What a great collection of links today, honey! Honestly, I think holidays spent hanging around the house with family and a good book are the best holidays 🙂 That's mainly what I'm doing today, and later on we're going to have a little barbecue with some family friends. I went for a swim this morning, and am currently cooking up a gluten-free, vegan peach crumble!
You know, I'm more of a fiction person myself, but I do enjoy the occasional non-fiction book. Eating Animals (Jonathan Safran Foer), The Ecological Revolution (John Bellamy Foster), and Eat & Run (Scott Jurek) are some good ones. Right now, some fiction books I'm reading are I Know This Much is True (Wally Lamb) and Trouble (Non Pratt). Two very different reads, but good ones!
I drink so much coffee that the majority of it HAS to be decaf, or I think I'd go into overdrive! If I have more than one cup that's fully caffeinated, I start shaking for the next three hours. No joke, haha. So, I guess I stick with decaf!
