When in “dinner doubt”, make a curry! I’ve always loved a good, quick & easy curry. You might remember, back in the day, me telling you about my all-time favorite meal, Chana Masala. Basically, just a chickpea and tomato curry, but so satisfying and delicious! I’ve actually gotten out of the quick curry making in recent years…and boy, I don’t know why!
Now that we’re back into the swing of school (hello, spring semester!), work, and life, post holidays, I know I’m not the only one looking for some super easy meals they can throw together for lunch and/or dinner. Something wholesome, delicious, but super convenient for those busy days! Curry always seems like the answer and paired with some Minute® Ready to Serve Brown Rice & Quinoa…I think we’re in business!
I made a simple curry of coconut yogurt, chickpeas, some chopped up broccoli and carrots, and of course some good spices to really amp it up! Pair that with the nutty, slightly crunchy, and chewy texture of the Minute Ready to Serve Brown Rice & Quinoa and you couldn’t ask for a more delicious gluten-free and vegan meal! Besides the “yum” factor, the “quick & easy” factor will blow your mind!
All you have to do is chop the veggies and let them sauté in a pan to soften, add the chickpeas, coconut yogurt, and spices to warm everything through. While that component of the meal is doing its thing, microwave your Minute Ready to Serve Brown Rice & Quinoa to warm it through and you’re done! It dawned on me while preparing this meal that not only does it make a great lunch or light dinner for 2, but this would be PERFECT for meal-prep lunches!
So while you’re drowning in school work (like me), rushing around with family, work deadlines, or just…life, “curry in a hurry” should seriously be your new motto (I know it will be mine!) Plus, there’s minimal clean-up! Since you can throw away your empty, BPA-free Minute Ready to Serve Brown Rice & Quinoa cups after you’ve microwaved them, you only have to worry about the one pan you used! What a win! Speedy prep, speedy cooking, and speedy clean-up all so you can enjoy the deliciousness in a flash!
10-Minute Coconut Yogurt & Chickpea Curry
- In a greased cast iron skillet or greased sauté pan, sauté the carrots, broccoli, shallot, and garlic for 5 minutes until slightly softened over medium-high heat.
- Add the chickpeas, coconut yogurt, and spices, and sauté for another 5 minutes on lower heat, until the veggies are soft and everything is mixed and warmed through.
- Microwave the Ready to Serve Brown Rice & Quinoa cups according to package directions.
- To serve, plate one of Ready to Serve Brown Rice & Quinoa cups with half of the curry and repeat for the other serving.
