Who doesn't love a cupcake? Who doesn't love a no-bake treat? Who doesn't love a sweet little bite? No hands? That's what I thought! Anything you can just pop in your mouth that satisfies that sweet craving, while still being healthy, is kind of perfect, don't you think? It seems like we've all "mostly" settled into the New Year, the holiday craziness has settled, but the winter humdrum has settled in. We all find ourselves in need of some sweet comfort a little more often just to get through the week.

I know I need something a little fun to motivate me through these dreary (very dreary this year!) weeks! So who says we can't have a little sweet treat to end our day? Why can't it be made with real, simple, wholesome ingredients? Well, it can! Bonus points, we don't even have to spend any extra time baking up some elaborate, complicated, healthy treat. We can just "hack the system" so to speak! We need this new year to work for us and my friends at LÄRABAR can help us all out!

With LÄRABAR's real food ingredients and delicious flavor varieties, a healthy treat to keep you motivated (and fueled) all throughout the year was easy to come up with! Something small and bitable with tons of flavor and customizable options in literally no time at all! We are all so diverse, in our goals, life stages, and health journeys, so having all these options just seemed to perfect not to share when I know we could all use some love!

All you have to do is stock up on a variety box of LÄRABARs through Amazon's "New Year, New Year" promotion, which gives you 25% off now through 2/14 (hint, hint, these would also be great as a Valentine's Day treat!). Once you have your choice of bars, whip up some quick marshmallow fluff and gather any toppings of your liking! All you really need is some LÄRABARs and the fluff, but we all know toppings seal the deal! I had fun and matched the bars to the toppings. Coconut Cream Pie with shredded coconut on top, Chocolate Chip with chocolate chips on top, Blueberry Muffin with a blueberry on top!

Each bar gives you enough for 2 "cupcakes". Just break it in half, lay a strip of parchment or wax paper in a mini muffin tin, squish half the bar in the mini muffin mold, remove, top with fluff, and any extra toppings you'd like! Cupcakes that are 100% real fruit, nuts, spices...and chickpea liquid? I say cupcakes for all!

A last minute treat for any occasion! 2-Ingredient No-Bake Cupcakes that are gluten-free, vegan, and raw! These customizable dessert bites will bring a smile to your face with their taste and real food wholesomeness!

Ingredients

  • A variety of LÄRABAR Flavors (1 bar = 2 cupcakes)
  • A Batch of Homemade Sugar-Free Vegan Marshmallow Fluff
  • Additional Toppings:
  • Sprinkles
  • Shredded Coconut
  • Fresh Berries/Fruit
  • Chocolate Chips
  • Freeze-Dried Fruit

Instructions

  1. Cut strips of parchment or wax paper and lay the strips in the molds of a mini muffin pan.
  2. Choose your bars and break them in half. Mold each half into each mini muffin indent.
  3. Once molded to shape, remove by lifting the parchment strips off the pan.
  4. Top each cupcake with a dollop of fluff and add additional toppings to your liking.
