Are you ready for the EASIEST cookie recipe ever? The simplest, no-fuss, delicious gluten-free cookie you'll ever bake. Just THREE ingredients is all you need for the classic old-fashioned peanut butter cookie you grew up with. Actually, I did not grow up with peanut butter cookies...I can't even remember having a peanut butter cookie (although I'm sure I have somewhere in that childhood of mine). Peanut butter blossoms, yes; but a "just" peanut butter cookie? I don't think I would have ever gone for that one if offered.
Regardless or my lack of peanut butter cookie eating in the past, it is now a THING in the present (and future). Of course, that means we needed to do a little bit of tweaking to the classic recipe. There shall never be eggs here, nor dairy or flour, and while I'm at it, let's nix the sugar. That leaves us without the traditional peanut butter cookie base, but still with the essential non-negotiable ingredient...i.e. PEANUT BUTTER. Not only peanut butter, but peanut flour too (makin' these babies grain-free!)
I will say, I had some MAJOR failed trials on these cookies. I knew there were versions of old-fashioned peanut butter cookies that were minimal ingredients, but they all included eggs (ick!). I tried swapping that with some commercial egg replacer...that was not a good idea. I needed something binding, because I was also using a natural peanut butter so it was more "loose" than the 'ole Jif or Skippy. After I basically covered my entire kitchen (and self) in peanut residue (peanut allergic, not welcome!), it finally hit me to use my peanut flour! That was the vegan key, my friends! It worked like magic and made these basically pure peanut love.
Before I give you the magic 3-ingredient tricks of the trade, this recipe also has a special purpose behind it. 3-Ingredient Old-Fashioned Peanut Butter Cookies (Gluten-Free, Vegan)

Instructions
- Preheat the oven to 350°F.
- In a large bowl, mix together the peanut butter, peanut flour, and erythritol until throughly combined.
- Roll 12 balls (about 1-2 table spoon size) in your palms, flatten them just a bit, and space them out evenly on a Silpat or parchment lined baking sheet.
- Make simple cross/lines with the back of a fork on the tops of each cookie.
- Bake the cookies for 8 minutes.
- Remove and let cool. Store in an airtight container (these are very delicate!)

My family was obsessed with these! I got requests for more batches so they could give them out to their coworkers and friends too! These peanut butter cookies taste like delicious sweet perfect peanut butter pillows. They would be optimal for a cold creamy glass of unsweetened vanilla cashew milk, if you ask me 😉 If you're a peanut butter addict...you may get into some trouble with these, but hey! 'Tis the holiday season after all. Although, old-fashioned peanut butter cookies are kind of perfect ALL year-round...there is never a wrong season for peanut butter!
