What Are The Best Potatoes To Use?
Any small baby potatoes will work! I used a 1.5-pound bag of Little Potato Company "Dynamic Duo" potatoes. Baby potatoes like this are also known as "creamer potatoes" due to the super smooth and creamy center! The skin is super thin and delicate, which is why you would never need to peel them! Red, yellow, and blue/purple skin are the most common colors you'll see.
Why You Don't Need Oil
You don't need oil for these crispy potatoes! When using an air fryer, oil isn't needed and you'll still get crispy potatoes due to the hot airflow. When using baby creamer potatoes, you don't need to worry about soaking the potatoes either. Some people like to soak their cut potatoes in water to remove excess starch. You don't need to when using this variety. Plus, if you don't thoroughly dry potatoes off after soaking, you'll end up with soggy air fryer potatoes.
Seasoning Ideas To Use
Anything goes here! These are just some ideas to get your flavoring juices going!
- Lemon Italian Herb: This is the delicious seasoning combo I used! Dried parsley, basil, and oregano with garlic, onion, salt, and pepper. I added a squirt of fresh lemon juice which added a refreshing zing and helped the hefty dried herbs stick better to the potatoes.
- Lemon Garlic: Use some lemon zest and garlic or garlic salt for this combo.
- Chili Powder: For a great Mexican or Tex-Mex vibe, use your favorite chili powder to spice it up!
- All-Purpose Seasoning: Use a homemade all-purpose seasoning that will go with anything.
- Cajun or Creole Seasonings: Perfect spicy southern vibe!
- Greek Seasonings: Some oregano, lemon, dill, and garlic!
- Smoky Blackened Seasoning: Some smoked paprika, pepper, garlic, and onion!
- Salt & Vinegar: Add some salt and white vinegar for a crispy (and creamy) salt and vinegar chip!
- Salt + Pepper: You literally could just use salt and pepper and still have mouthwatering potatoes!
How to Make Baby Potatoes in the Air Fryer
- Slice your potatoes in half.
- Add your chosen seasoning.
- Toss them well to fully coat.
- Add your seasoned potatoes to the air fryer basket.
- Air fry for 10 minutes, give them a shake.
- Air fry for another 7 to 10 minutes until golden brown and crispy!
Tips and Tricks
- If your potatoes need to be cleaned beforehand, make sure you lightly rinse and fully dry them before you begin the cooking process.
- While you could leave the baby potatoes whole, for this recipe I recommend you slice them in half. This releases just enough sticky starch to ensure your seasonings stick to the potatoes! It also allows the potatoes to actually get super crispy! Leaving them whole couldn't yield those mouthwatering crispy edges!
- The larger your air fryer basket is, the quicker and more evenly your potatoes will brown and crisp up. This is why, with a smaller basket, you need to shake the potatoes well before they go in for that second round of air frying!
- Besides seasoning your potatoes before cooking, you can add some extra flavor when they're done! Add some vegan butter, eggless mayo, mustard, high-quality extra virgin olive oil, or some vegan nacho cheese sauce! Of course, a side of ketchup is a must!
- Crispy air-fried potatoes are BEST served right away! The moment they're done, pop those bad boys on a plate and devour!
To Store Your Potatoes: You can store cooled leftover potatoes in an airtight container in the fridge for 6-7 days. You can also air fry the potatoes ahead of time as part of your meal prep routine for an easy side dish, addition to salad, even a healthy snack!
To Reheat Your Potatoes: The best way to reheat any leftover air fryer potatoes and crisp them back up is by tossing them back in your air fryer at 350°F for 4-5 minutes. You can also heat them up on a sheet pan in the oven or give them a quick heat up in the microwave (they won't be crispy, but they'll still be delicious!

Ingredients
- 1.5 lbs of Baby Potatoes (any color)
Seasoning*:
- Juice of ½ a Small Lemon
- 2 Tsp Italian Herbs

Instructions
- Rinse, dry, and slice your baby potatoes in half.
- Add them to a bowl along with your choice of seasonings and toss well to fully coat.
- Add the seasoned potatoes to your air fryer basket and set the air fryer to 400°F for 10 minutes.
- After 10 minutes remove the basket, shake the potatoes around, and return the basket to your air fryer.
- Air fry the potatoes again for 7-10 minutes or until they are evenly crisp and golden brown.

Ugh, I've been making mine wrong 🙁 I love using baby potatoes in the air fryer. So quick and so easy!
