What are potato latkes?
Let's start with the basics! If you're like me, you may not have grown up with latkes during the holidays. When one hears the term "Latke", they assume the Jewish potato latke that is served during Hanukkah (Chanukah), which is shredded potato, flour, egg, garlic, and onion, shallow fried in a pan. However, the Jewish latke is just a variation of a potato pancake which is served in many cultures around the world. The national dish of Belarus, the potato pancake is essentially some regional variation of potato, flour, egg, seasonings, and served with sweet or savory condiments like applesauce, sour cream, etc. There are German/Austrian KartoffelpufferΒ British potato cakes, Irish boxty, KoreanΒ gamja-jeon, SwedishΒ raggmunkar, PolishΒ placki ziemniaczane,Β CzechΒ bramborΓ‘k, Ukranian deruny,Β IranianΒ kuku sib zamini, etc.
How are potato latkes made?
Jewish potato latkes are made with a mixture of peeled and shredded white potato, flour, egg, salt, some onion, and possibly garlic. Spoonfuls of this mixture is dropped into a pan of hot oil, making small discs or "pancakes", and allowed to brown on each side in the shallow oil. If you ask me, latkes are kind of like hash browns or blobs of shredded french fries! However, they're not vegan or gluten-free,Β but they are a potato dish and that means we have to find a way to make them "approved" for all of us!
How do you make gluten-free & vegan potato latkes in an air fryer?
Just a few simple ingredient swaps and a few quick steps! These latkes are still using shredded potato, onion, arrowroot starch (to make these paleo and grain-free), vegan egg replacer, a bit of black pepper and a hint of smoked paprika! You can change up the seasonings depending on your preferences, but there was something about the smoked paprika that sounded (and ended up tasting) super good! Mix all those ingredients together, form about 2 tablespoon sized "pancakes" place them in your air fryer, set the fryer to 350Β°F and air fry for 5 minutes, flip, and air fry for about another 3 minutes until perfectly golden brown and crisp!
What should you serve crispy potato latkes with?
I served my air fryer potato latkes with applesauce. I love a good sweet and savory combo! You could also pair them with some vegan sour cream, KETCHUP, bbq sauce, vegan yogurt, jam, maple syrup, etc (even plain will do!). You can eat potato latkes for breakfast, have them as a snack, or as a side dish for dinner. Latkes can be way more than just a holiday food! And because these aren't fried in oil, you can make a few batches ahead of time and simply warm in a toaster oven without them becoming a soggy mess!

Ingredients
- 2 Β½ Cups Peeled, Shredded White Potato*
- Β½ Cup Minced Sweet Onion
- 3 TB Arrowroot Starch
- 1 Prepared Bob's Red Mill Egg Replacement
- Β½ Tsp Smoked Paprika (optional)
- ΒΌ Tsp Black Pepper (optional)
- Applesauce (to serve)
Instructions
- Preheat your air fryer to 350Β°F.
- In a large bowl, mix together the potato, onion, starch, and prepared egg. Add spices if using.
- Take about 2 tablespoons of the mixture and form a thick flattened disc.
- Place in the air fryer and repeat (depending on the size of your air fryer you will need to do multiple batches). Keep the latkes evenly spaced in the air fryer basket for optimal browning.
- Air fry the latkes for 5 minutes, flip the latkes, and air fry for about 3 more minutes until golden brown and crisp.
Notes
I used pre-shredded potato, but you can always shred your own, making sure to ring out excess moisture with a cheese cloth.

In Japan the main type of potato cake is deep fried in batter. I'd much prefer to air fry.
