O, French Toast. I think I’ve finally conquered humanity’s biggest struggle with French toast. We’ve discussed the whole “soggy bread” thing multiple times on Strength and Sunshine, so you know my feelings about it. But wait! We never have to deal with subpar French toast EVER again! We all can reclaim French toast as “TOAST” and now soggy, mushy, squares of sadness! Crisp and ready to be dosed with maple syrup (the only thing that should have the ability to make French toast soggy).

AIR FRY IT! Yes! The key to French toast success is simply to place it in the air fryer! You don’t need any oil or butter to “fry” this bready breakfast deliciousness, just a dip in some coconut milk and baking powder, then shredded coconut. Pop it into the air fryer and in about 4 minutes flat, you have TOASTED Coconut French Toast! It comes out perfectly and is so quick and easy, you may just start making French toast (toasted coconut french toast to be exact) daily!

You know, I’d originally made this toasted coconut French toast a year or two ago using the traditional “pan-fry” method. Nothing wrong with that, but that required toasted the coconut separately before coating the bread slices. With my GoWISE air fryer, that step is taken out. The shredded coconut, on all sides of the bread, gets perfectly toasted with that hot air magic!

Even though it may be “Spring” (technically speaking), winter doesn’t seem to have abated much. I think this was the worst winter season I’ve had in recent memories of my 21 years. Break out some tropical coconut inspo for breakfast and it may just have the ability to make me feel better. If I can’t feel the summer warmth and joy on my body, at least I can taste it…right? Coconut tends to do that; that’s why I love it so much! (And I’m just really egging on Mother Nature to hurry the arrival of summer and just skip Spring!)

As we know, toasting, anything, brings out the flavor of the “toasted”. Ingredients
  • Per 1 Serving:
  • 2 Slices of Gluten-Free Bread (use your favorite)
  • ½ Cup Lite Culinary Coconut Milk
  • 1 Tsp Baking Powder
  • ½ Cup Unsweetened Shredded Coconut
Instructions
  1. In a wide rimmed bowl, mix together the coconut milk and baking powder.
  2. Spread the shredded coconut out on a plate.
  3. Take each slice of bread and first soak in the coconut milk mixture and a few seconds before transferring to the shredded coconut plate and fully coating the slice in the coconut.
  4. Space both the coated slices of bread in your air fryer, close it, and set the temperature to 350°F and 4 minutes.
  5. Once done, remove and top with maple syrup or your favorite French toast toppings!

    I keep seeing all these delicious recipes Rebecca, using an air fryer, and it’s making me more eager to get one!

    I just got an Optimum VAC2 Air Vacuum Blender though so I’m going to have to persuade Lynne to let me have an air fryer and I’ll have to create some space in the cupboard for one!
