I love quick breads! They’re so easy to make; from the classics of banana, zucchini, or pumpkin bread, the flavor options are endless. So when I found myself with a nice batch of fresh homemade applesauce, an apple quick bread was the first thing that popped into my mind! I wanted to make something special with that applesauce and not just eat it all before I could actually “use” it!

I made a good decision with this bread and was able to use my applesauce in two ways. Directly in the bread and as that lovely topping you see running down the middle of the loaf. That topping was the inspiration for the whole bread. I thought of that before I even began baking. That led me to thinking of apple pie and how this bread reminded me of an apple pie.

If ya’ll remember though, I’m not the biggest fan of pie. Except for maybe this specific “pumpkin pie“, o and these “portable” pie bites. I really don’t like apple pie. I’ve never liked apples cooked and baked like that. The chunkiness of slimy apple cuts in an apple pie just has no appeal to me. So by using my applesauce, which is smooth and lovely, not slimy gelatinous chunks of apple, I fixed that problem. The smooth applesauce acted as part of my vegan “egg:, oil, and sweetener in the bread, and the lovely topping.

I also tried something new in this bread. A psyllium husk “egg”! I never used psyllium husk powder in my baking before, but so many vegan and gluten-free baker do, so I though I’d finally try it myself. Now it may be my favorite binder to use in baked goods! The psyllium worked wonders in the texture, hold, and crumb of this bread! The bread held up so well, was not soggy and sad, and was the perfect density! The trick with the powder though is mixing it with water the second before you put it in the actual batter you are making. Otherwise, it forms in to a thick ball that isn’t easily broken up if you aren’t using an electric mixer.

And will it (not) surprise you that I enjoyed this bread for breakfast? Okay, and at dinner, but it was so delicious! In my opinion this was gluten-free vegan quick bread perfection (my mom agreed as well). I think that’s enough for me to stick to breads and not pies. I haven’t even had my favorite pie in 2 or 3 years now, being away at school and all during the holidays. I do plan on making pie again, probably “redoing” the recipe a bit too. There’s plenty of pie-baking months ahead though, all in due time!

O I remembered something! Another pie I loved, my whole family loved, years ago was from Costco! They make the best pumpkin pies, but I think we also enjoyed the Entenmann’s pumpkin pie before we discovered Costco. Needless to say, never homemade, but needless to say now, always and forever homemade. Homemade by me 😉

Ingredients
  • 1 Cup Bob's Red Mill Gluten-Free All Purpose Flour
  • ½ Cup Gluten-Free Oat Flour
  • ½ Cup Quinoa Flakes
  • 2 Tsp Baking Powder
  • 1 Psyllium Husk Egg (1 TB power + 3 TB water)
  • ½ Cup + ¼ Cup Homemade Applesauce
  • 1 Cup Unsweetened Almond Milk (or non-dairy milk of choice)
  • ½ TspPure Madagascar Bourbon Vanilla Extract
  • 1 Tsp Cinnamon
  • ¼ Tsp Nutmeg
  • ¼ Tsp Allspice
Instructions
  1. Preheat the oven to 350°F.
  2. In a large mixing bowl, combine all ingredients except ¼ cup of the applesauce. Add the mixed psyllium egg last and begin stirring the batter immediately.
  3. In a well-greased bread pan (9x5), pour the batter in and smooth evenly throughout.
  4. Take the ¼ cup of reserved applesauce and pour it in a line down the middle of the loaf. Use a knife to swirl it into the batter a bit.
  5. Bake the loaf for 40 minutes, allow it to cool on a wire rack. Enjoy at room temperature, warm, cold, but can also freeze well when sliced.

    This looks great! I really want to try baking with psylium husks but they are not that easy to find unless on line so I have resisted using them in my recipes! One day I might have to give in…just for my own recipes and not the ones I share on the blog!

    When I was small my mom used to make apple pie on the weekends. I loved it, though I would never make one myself – way too much work for me. But this version sounds so much more easier and equally delicious!

    Hmmm… interesting idea. I love using applesauce in baked goods, and coincidentally, I actually love using applesauce in my apple pie too 🙂 Funny you don’t like apple pie though — I’m sort of surprised, but not *that* surprised because we all have our quirks… I’m sort of bound to apple pie because it’s my husband’s fave… 🙂

    I do not like sweets in general – but I do love blueberry pie once year. Apple pie does have a cobbler texture – but I would rather pass on it. Beautiful photos of this!

    In answer to your questions, I’ve never heard of psyllium husks, but I’ll check them out. Hope I spelled that right.

    As for apple pie, oh yes, I adore real apple pie. If I didn’t restrain myself, I’d eat the whole thing by myself every time I bake one! I don’t make mine as sweet as some folks do, and I like the apples sturdy enough they don’t go mushy. I especially love a tender, whole wheat crust, which is one of my personal specialties.

    But the apple pie in the title is why I just had to check out this recipe. I love your idea of the applesauce topping.

    Everyone has different taste buds, right? My daughter can’t bear avocado or yogurt because they’re slimy. I even know a few people who don’t like chocolate! So while my taste buds might scream in disbelief, my brain understands easily enough how you might not enjoy apple pie.

    Thanks for an intriguing recipe. I love finding new twists on old favorites, don’t you?

    Love this idea! Love that you mixed pie into gluten free bread! I think Sara’s idea is great too. This would be good as a nut butter sandwhich. I also like that fact that you didn’t add any sugar, just the apples sweeten it! Of course I love the quinoa addition as well.

    This sounds delicious! I bet Aurora would love it made into a sandwich with peanut butter! I like apple pie but not a fan of the crust so I usually make apple crisp but have to make at least one apple pie with the apples we pick at the orchard. This year I did a Caramel Apple Pie with a pie crust and crumble topping, caramel inside and drizzled on top. It was a family favorite for sure.

    This bread looks very yummy! Love the applesauce down the middle and all that delicious cinnamon. I’ve never baked with psyllium husks or done anything else with them for that matter. I keep hearing about it, but I haven’t felt compelled enough to make the purchase. This bread might do the trick ????

    I love real apple pie! Well, I love the filling… I’m totally not a pie crust person. Unlike you, I adore the warm, chunky apple filling. To each her own 🙂 Either way, this bread looks delicious. Much as I love pumpkin, I’m glad to see apples getting some love, too!

    Looks delicious! How can you tell when the bread is done in the middle? Sometimes when my bread comes out like that in the middle (what your bread looks like in the picture), it’s underbaked. I know you wouldn’t let that happen.

    I love how this bread includes everyone with dietary concerns. Baking vegan and gluten-free is fun for me (but I have had some wicked failures let me tell you, lol.) Your bread looks wonderful and I bet it is just as tasty!

    A slice of this warm from the oven would be magical!!!!!!!! With that sweet saucy top!!! And you dumped the spices in in just the right amounts 😉 I love it! I just want a big slice right now, maybe with some nicecream on top! <3
    Never baked with psyllium, but I've seen a lot of dehydrator recipes with it. You know so everything doesn't end up crispy and unbendable for like tortillas and such.
    And I do actually love apple pie. Never made it, rarely eat it, but those warm juicy (not slimey!) apples are delicious to me <3

    I like pie but not the crust, and costco’s pumpkin pies are amazing, they are huge and so cheap! This apple pie bread is where it’s at, id take this over pie anyday 🙂
