Because if you're not making mac & cheese every which way, are you really a macaroni and cheese lover? There is no denying that mac & cheese is the ultimate comfort food (at least in America), and what's better than eating it in a bowl? When it's MINI and BITE-SIZED! Not only that, but of course it's gluten-free, vegan, and allergy-free so everyone, every.single.mac.and.cheese.lover can enjoy these mac & cheese bites!
If you thought macaroni and cheese couldn't get any better, than this is the perfect recipe to debunk that myth. Anytime you put the adjective "mini" in front of something, it automatically makes it about 10x better than the original. It's cute, it's fun, and kids LOVE it! (That's how you can get them to eat brussels sprouts too!) Another great thing about this recipe being baked, mini, and handheld...you've got a PRIME ketchup-dipping vessel on your plate!
Are these mac & cheese bites easy to make? How do they stay together?!
Very easy! You just need to whip up a batch of my gluten-free, vegan, allergy-free one-pot mac & cheese and then add two Bob's Red Mill prepared egg replacements to the cooked mac and cheese! Mix those "eggs" in and then scoop about 1 to 2 tablespoons of the mac & cheese into a greased mini muffin pan, bake, and ta-daa!
Now, besides the required ketchup dipping, you do have some modifications and options for these bites, if you so please.
1. You can use your favorite gluten-free macaroni (elbow) pasta. I used Ronzoni brand in this recipe (even though my one-pot macaroni recipe calls for these noodles).
2. You can use 1 or 2 Bob's Red Mill Egg Replacements. The first time I made these, I used one, the second time, I used two "eggs". Using two makes these bites much more stable for little hands and freezing, but either way works.
3. You can add any flavorings you want to the macaroni and cheese. Maybe some curry powder?
4. Dipping action is a must (I think)! Maybe classic ketchup, nightshade-free ketchup, bbq sauce, tomato sauce, your choice!
What are the best ways serve these mac & cheese bites?
These gluten-free vegan mac & cheese bites are GREAT for an after school snack, a lunchbox "entree", a side dish to dinner, or as a party appetizer! Keeping them plain is perfect for the kids, but if you want to use them for an adult gathering, spice them up like I suggested by adding something like curry powder, buffalo sauce, chili powder, etc. to the mac & cheese before baking! A perfect gameday/tailgating food too!
The only thing you have to do now is make these mac & cheese bites and watch ALL the smiles appear and happy bellies rejoice! If you want to make them ahead of time, you totally can! Just whip up the mac and cheese, bake the bites, allow them to cool completely. Transfer them onto a flat baking sheet and freeze them in one layer in the freezer. Once frozen, you can add them to a plastic bag or freezer container together. Then just defrost and reheat in a toaster oven of microwave to serve!

Ingredients
- 1 Batch of Gluten-Free Vegan Mac & Cheese
- 1 to 2 Prepared Bob's Red Mill Egg Replacements
Instructions
- Preheat the oven to 375°F.
- Prepare your mac & cheese and while that's cooking, prepare the egg replacer.
- Once the mac & cheese is done, mix in the prepared egg replacer(s).
- Grease a non-stick mini muffin pan (24 or 48 cup sheet).
- Add about 1 to 2 tablespoons of the sticky mac & cheese to each greased mini cup (you'll have to do 2 batches if you have a 24-cup pan).
- Bake the bites in the oven for 10 minutes.
- Remove and let cool slightly before removing from pan and serving with your choice of dip.

Is it really that easy? Yes! There's nothing to it! I found that gently lifting the mac and cheese bites out of the mini muffin pan using a fork or knife is best (especially if you use only 1 egg replacement!) Super delicious, super fun, and NOT only for kids! The ultimate comfort food, in fun bitable form is made for all of us...trust me 😉
