Who am I?! I'm cheating on potatoes with beets! Actually beets are one of my other favorite foods (okay, I have a lot of favorites and you probably want me to shut-up since I say every food is my favorite but...), I thought they should get some recipe love. I usually just eat my daily beets (yes, daily) chopped up and raw in a mix of veggies I have for dinner, but sometimes a girl has to get fancy with her beets.
Here's my history with beets. I started as the typical American with being introduced to beets as pickled and in a jar. I think I told my mom I wanted to try them because I saw this very old episode of Doug (does anyone remember that show?) and he was forced to eat beets at the dinner table. Well, I wanted to try them for myself, so I did. And I loved those salty, pickled, cold sliced beets! Then years later, my dad actually bought REAL beets with the greens still attached. I was amazed. He simple boiled them on the stove and we ate them cut up. O, I fell in love all over again! Then I wanted to start making REAL beets all the time, so I eventually started roasting them in the oven. One of my first "recipes" on the blog was how to roast beets (which I called my candy). My mom and I loved them this way. Then I got pretty lazy and didn't feel like having them bake for so long. So I skipped even peeling them to begin with. Then I just said screw it and started enjoying them, unpeeled, and raw! I will always loved a perfect roasted sweet beet (cold from the fridge the next day is best, just like Brussels!), but raw and crunchy has been the name of the game for a while now!
Except this time. Not raw today! No, baked into "fries"! BBQ coated fries! You don't even need to dip them (even though I still did)! I actually got the idea for these when someone, a few months ago, posted a picture either on instagram or their blog, of beet fries that they had at some restaurant. They said the fries were one of the best things ever. So, I got to thinking and made my own. That's a lot easier than traveling hundreds of miles for some beet fries...even for this beet lover!

Stepping away from the traditional potato, these BBQ Beet Fries are a healthy, low-carb, baked side to any summer cookout. Make room on your plate for this super veggie showstopper. Gluten-free, vegan, and paleo, everyone can enjoy some “fries!”
- Yield: 3-4 1x
- Category: Side Dish, Snack
- Cuisine: American
Ingredients
- 3 Large Beets
- ½ Tsp Onion Powder
- ¼ Tsp Garlic Powder
- ½ Tsp Dried Marjoram
- 1 Tsp Dried Oregano
- Dash of Black Pepper
- 3 TB Homemade BBQ Sauce
Instructions
- Preheat the oven to 425°F.
- Wash the beets and then, without peeling them, cut the end off so the tips are flat. Then Cut each beet in half and then cut each in to thin wedges.
- In a large bowl, combine all spices and sauce. Then coat all the beet wedges in the mixture, making sure every side and slice is well and coated.
- Line a baking sheet with parchment paper. Then lay out each wedge and place the sheet in the oven to bake for 15 minutes. Flip each wedge and bake for another 15 minutes.
- Remove and serve with more BBQ sauce....or ketchup 😉
Yes, these are pretty unconventional baked "fries", but they are a super tasty and perfect side dish for summer cooking! And even if you're shaking you head about beets, since I know there are some "beet-haters" out there, give these a try before you knock 'em! You may just be surprised! I mean, everything is better with BBQ sauce (or ketchup) and eaten as a fry!

I too am a beet lover! I HATED canned beets I was served as a kid, but as an adult discovering juicing I fell in love with the earthy sweetness they bring to a fresh vegetable juice.
Then like you, I discovered their crunchy wonderfulness raw, in salads - I'm too lazy to peel as well and if you ask me you don't need to peel them.

I loovveee beets. I love to roast them in a foil packet, then toss with a light mixture of orange juice and maple syrup for a touch of sweetness (even better cold in a salad with this sauce). I've spiralized beets before and added to a salad, so colorful! Have you tried golden beets? The color is so lovely and the flavor not quite as earthy as deep red beets.

I've just started to really love beets! I had it mixed in with quinoa the other day and it was so good. Good idea to make them into fries.

I tried making beet fries long time ago but they burnt really easily..i will give it a try again because they look amazing and i like beets as well.

AH I LOVE BEETS 🙂 except they are a fodmap so i have to limit them, but I love this as a potato alternative side, so that way everyone can enjoy some beets AND potato salad 🙂 I just like them plain and roasted, but spiraling seems amazing!
