Celery root is also known as celeriac. It's the large bumpy, brown-tannish, gnarly root of the celery plant. You know celery by the green stalks you purchase, while the root is edible as well and grows underground. - Celery Root: You'll want a medium to large-sized celery root. About 3 pounds. You can use multiple small knobs or just get one large one.
- Shallots: Shallots provide a delicate sweet onion flavor with a hint of sharpness. They pair perfectly with the slight sweetness of celeriac.
- Garlic: Garlic adds a ton of umami flavor to this mash.
- Vegetable Broth: Instead of boiling the root in water, using vegetable stock adds so much flavor to this simple veggie mash!
- Seasonings: A simple combo of salt, black pepper, and dried thyme is all you need.
- Olive Oil: Choose a good quality extra virgin olive oil to add depth and richness to the mash.
- Vegan Butter: A small amount of vegan butter adds hints of creaminess without the need for actual cream!
Ingredient Variations
- Want an extra creamy mash? You can add ¼ to ½ cup of vegan sour cream, vegan cream cheese, vegan mayo, vegan yogurt, or full-fat coconut milk to this recipe.
- Add more fresh or dried herbs! You can add sage, rosemary, parsley, or another dried or fresh herb to change up the flavors in your mash.
- Change up the spices. Make this mash with a spicy kick by adding some chipotle and cayenne pepper powders. Even a dash of hot sauce for a sweet and spicy kick!

How To Cut And Prepare Celery Root
- First, you'll want to wash and dry off the root before chopping off the top gnarled root portion and any random knobs, dirty crevices, or fibrous bits from the bulb.
- Then use a vegetable peeler to shave off the tough brownish outer skin until you reveal the inner light flesh of the root. (You can also do this with a paring knife if you're very careful)
- Using a large sharp knife, put the flat side of the bulb down on a cutting board before slicing the bulb in half.
- Now use your large knife to chop the celery root into 1-inch chunks.
How To Cook Celery Root Mash
- In a large soup pot, add the chopped celery root, shallots, garlic, and seasonings. Pour in the vegetable broth so that the veggies are covered. Cover the pot and bring it to a boil on the stove before reducing the heat to a medium-low simmer and allowing the veggies to soften for about 15-20 minutes.
- Once the celeriac is fork tender, carefully drain the liquid, reserving about ¼ cup of broth to pour back into the pot. Add the vegan butter and olive oil to the hot and boiled veggies.
- While the celeriac is still hot, use an immersion blender or potato masher to mash the veggies smoothly. You can also use a food processor, however, your best bet is to use the immersion blender for an ideal creamy, smooth, slightly textured root veggie mash.
- Taste test the mash and add any additional herbs and seasonings you desire before serving.
