So you all know I have a huge obsession with Purple Sweet Potatoes. Stokes Purple Sweet Potatoes from Frieda's Produce to be exact. I have never tasted a better potato in my life. These things are life changing I am telling you. I love roasting them up with cinnamon in the oven (no oil needed!) and they get so crisp and perfect. They also rock baked in the microwave and come out a bit drier then a normal orange sweet potato, but in a good way. But no matter what way you chose to eat them, you will be blown away by their deliciousness...and beautiful purple color. So of course I had to reach out to Frieda's and let them know just how awesome their PSPs are. I am so glad I did. Not only does Frieda's provide awesome quality produce, but they are one of the most friendly and exceptional companies to work and interact with! They are so passionate about pleasing their customers and they love what they do. They are so kind and generous and just love hearing from their costumers on social media, through emails, and the recipes they create.
So Frieda's offered me a chance to pick out a January promotion package. There were 3 options: #HealthyNewYear, #WinterCitrus, and #CNY (Chinese New Year). Well I decided to go a little crazy and pick the produce box that had the weirdest things...the #CNY box! So here is what I received in the box:
+ Daikon (I never had one before, but I can tell you I will be buying these all the time now!)
+ Dragon Fruit (Look at this crazy thing!)
+ Kumquats
+ Buddha's Hand (Citron) (This is the scariest looking piece of produce around!)
+ Jicama
+ Dried Stir-Fry Blend Mushrooms
+ And of course the beautiful people at Frieda's would never think to NOT send a wonderful big bag of PSPs!
These PSPs are not going to last long 😉 But I have to remember to freeze some puree for PSPcakes once these babies go out of season...which they already are at my grocery :'( Anyway, to celebrate Chinese New Year, which starts January 31st-Febuary 13th, I decided to create a new fun recipe with some of my awesome crazy Frieda's produce. It is a single-serve Chinese dinner "stir-fry" bowl that will definitely get you in the #CNY spirit!
Chinese Salmon, Veggie, "Noodle" Stir-Fry
Ingredients: (serves 1 as a main or 2 as a lighter meal)
+ 1 Baby Bok Choy (chopped)
+ 4in. of Daikon (peeled and chopped)
+ ⅓ Cup Chopped Mushrooms (Shiitake or Portobello would be great)
+ ¾ Cup of Raw Rainbow Slaw
+ 1 Can of Wild Salmon
+ 1 Sheet of Nori (crumbled)
+ 1 Package of Spinach Shirataki Noodles (I got these in an Abe's Market order and had been dieing to finally give them a try!)
+ 1 Dried Japones Chile (optional, will be removed before serving)
+ ¼in Ginger Root (peeled and grated) or ¼ Tsp of Ground Ginger
+ ½ Tsp Coconut Aminos
+ ½ Tsp Brown Rice Vinegar
+ 1 TB Peanut Flour
+ ¼ Tsp each of Black Pepper, Garlic Powder, and Onion Powder
+ 2 TB Water
+ 1 Tsp Sesame Seeds (for serving)
Directions:
+ Once all of your veggies are washed, chopped, and prepped, add them to a large saute pan. Then add the salmon and break it up with your fork.
+ For the noodles, open the package and run them under hot water in a colander, loosening them up with your hand. Then quickly rinse them with cold water, dry, and add to the pan.
+ Next, add all the spices, flour, water, aminos, and vinegar. Leave out the sesame seeds.
+ Place the pan over medium heat and cook for about 10 minutes uncovered, stirring occasionally. Remember to break up the noodles with your stirring spoon/fork, as they are really long and uncut.
+ Once everything is heated through and the veggies are soft and lightly steamed, turn off the heat and serve in a big bowl! Top with sesame seeds and break out those chop sticks and get eating!

The Budda's hand you don;t actually eat (well you can if you candy it) but use just use the outside zest for a sweet flavoring. Plus is it used as a traditional Chinese fragrance to make the home smell good, haha! As for the Dragon Fruit...I still haven't given it a try, but I will!

I've never had the normal ones, but really any shirataki noodles don't taste like anything on their own.

This looks amazing!!! The flavor combination sounds perfect, and I've been hearing so much about Frieda's lately! Since my ears perk up every time I hear the word "vegetable," I'm intrigued :). I've never seen brown rice vinegar (just regular rice vinegar) - where did you find it?

It is from Eden organics brand. It was just on the organic isle if my grocery but I bet its online on vitacost or iherb too! You could use regular rice vinegar as well!
