Are you afraid of public speaking? Truth be told, I secretly enjoy it. Don't get me wrong, my body goes into hyperdrive those moments before you actually get up there and start, but once it's all over, I always feel a bit "sad". As long as I'm super confident in what I'll be saying or presenting, I get that feel-good adrenaline rush. I've always loved that thrilling rush ever since my competitiveΒ dance years. Getting on stage, on the floor, or in a stadium was that most amazing feeling.
Yea, how sad is that...now I get my thrills from public speaking π What a life! Now, this does all tie into the cookies I have for you today. As you all may remember, I was in a medicine/science/society research class this semester and working on a big research paper as the objective of the class. I choose the topic most near and dear to my heart, celiac disease. Because I was so passionate and confident on the subject, that 10-page research paper was a breeze (which actually ended up being 14 pages). You know that feeling of pride in the work you've done when you complete a big project like that? Kind of like bagels.
I wrote my paper on the struggles of celiac disease that go beyond just the physical symptoms. The lack of accurate awareness, social stigma and isolation, lack of safety and training in the food industry, and economic/availabilityΒ factors. With the paper written, the last thing we had to do was present our final research to the class. Really, just a "fun" presentation as my professor said. To keep it engaging, videos, gifs, powerpoint. Which I did with a quick powerpoint, pictures (from Strength and Sunshine...had to self-promote somehow!), a video...and then, of course, I couldn't go out with a bang without baking something delicious!
These cookies took some love, testing, and care to get just right! I overbaked the initial batch (I blame the crazy oven I have in my apartment) and the cookies were just a tad too dry. The next day after some tweaking of the recipe, I had my lovely friend Farrah come over to help me bake THE batch that would be given out at my presentation the next day. This batch was perfect! The flavor, texture, the glorious crinkle top! O, chocolate peppermint, my favorite flavor!
The next day at my presentation, do you know what the most stressful thing was? Deciding if I should actually give out the cookies! Ha! I was so nervous my class would hate them, my professor would hate them and then I'd fail the course! After I confidently ran my mouth about celiac disease for 10 minutes, I finished my presentation and waited until the end of class before revealing "the goods". And guess what...THEY LOVED THEM! What a win!Β You should take this as a lesson too if you hate public speaking or lack confidence in your presentation, just make sure you bake something super delicious, like these chocolate peppermint crinkle cookies, and that may just help you out!

Ingredients
- 1 Cup Gluten-Free All Purpose Flour
- Β½ Cup Millet Flour
- Β½ Cup Unsweetened Cocoa Powder
- Β½ Cup Granulated Erythritol (or preferred granulated sugar)
- 1 TB Psyllium Husk Powder
- 1 Tsp Baking Powder
- 1 Tsp Pure Peppermint Extract
- Β½ Tsp Pure Madagascar Bourbon Vanilla Extract
- Β½ Cup + 2 TB Unsweetened Applesauce
- 2 TB Vegan/Soy-Free Butter (melted)
- 2 TB Unsweetened Non-Dairy Milk
- Outer Coating:
- 3 Peppermint Candy Canes (crushed)
- Β½ Cup Powdered Erythritol
Instructions
- Preheat the oven to 350Β° F.
- In a large bowl, mix together all cookie ingredients to form a wet dough.
- Roll the dough into about 14-16 balls with your hands (about 1 heaping tablespoon each) and set the balls down on a prepared baking sheet with a Silpat or parchment paper.
- In a large plastic bag, combine the crushed candy canes and powdered erythritol together. Place about half the rolled balls in the bag at a time and give them a shake to coat.
- Place the balls down on the baking sheet again and press them down with your fingers a bit to flatten them out.
- Bake in the oven for about 10-12 minutes. Remove and let cool.

Not only are these chocolate peppermint crinkle cookies good for research presentations, but they just so happen to be rather festive for a cookie exchange or Santa's Christmas plate π I don't want to toot my own horn too much, but my paper is being nominated for the undergraduate scholarly journal π I know! Celiac disease has changed my life in so many ways and maybe most importantly, with the DELICIOUS food that CAN be made free-from and with love!

I loved your story as it reminded me of when I was still at school and we were given a topic in pairs in food tech (a fancy name for cooking) and me & my friend got Bran as out topic. 2 15 year olds trying to make bran sound interesting and not talk about poop too much! Fun times! After a bit of head scratching we made our presentation interesting by giving out bran muffins at the beginning, we tried to disguise the boringness of our topic by bringing out the food first, It sounds like our presentation was way more interesting than ours!

I hate public speaking!!! I get SO nervous and stumble over my words and shake like crazy ? I'm so glad I'm done with school and speeches!! Haha! I think it's awesome that you love it! I used to love when that happened - choosing a subject matter that you're so passionate about that the words just flow. If only all school papers could be that easy! Oh, man.
