Sometimes you just need a slice of banana bread, right? The most classic quick bread known to man. So cozy and comforting; one of the only acceptable ways to use bananas (in my non-banana-liking opinion). Of course we can make fancy banana breads with blueberries, gingerbread, or peanut butter, but sometimes I just want a slice straight up. A slice reminiscent of my gluten-filled childhood.
I've told you many times of my mom's banana bread (i.e. the good 'ole Pillsbury Quick Bread Banana Bread Mix in a box). When she baked up a loaf of that perfect banana bread (always adding tons of real banana), it was like heaven in the kitchen, my lunchbox, and my tummy. I love eating the slices over the next few days of the week, once the top of the loaf got this gooey, sticky coating (I'm assuming from the banana) on it.
Last summer I had to step back and bake a real "replica" of that perfect boxed mix. I needed a slice of perfect classic GLUTEN-FREE banana bread, vegan, and allergy-free. So I set out to make it perfect, where I could fool my mom and brother into thinking it was that same Pillsbury mix. Since anytime I think about, hear, see, taste anything banana bread, I always think about my mom, I thought with it being the month of May (Mother's Day and my mom's birthday coming up) it was time to reveal the dream loaf!
As I had this bread baking in the oven, the whole house smelled like my mom was baking that classic quick bread. I think the key to the perfect banana bread is adding in a ton of super ripe, sweet bananas. Not only does it help create the perfect "egg" for our egg-free baking, but the intense flavor, natural sweetness, and moist crumb is spot on. I used a combo of quinoa flour and this paleo baking mix. You couldn't tell it was so free-from. To make sure I had a solid version that was allergy-free, I still used the quinoa flour, but swapped with my standby gluten-free baking mix. You could even bake this completely grain-free (although quinoa is a seed, not a grain), by swapping the quinoa flour for more of the paleo baking mix. Kind of a "choose your own adventure" banana bread.
I wanted everyone to be able to enjoy a simple, 8-ingredient, easy, one-bowl, gluten-free banana bread. It may be a childhood must for me, but it should be anyone's go-to quick bread in a pinch. Even for banana-haters like myself, there is something about banana bread that is just so satisfying and comforting. I love banana flavor, but could never eat a whole, unaltered banana. Ah! But in perfect bread form, how could you say no? How could anyone say no?

Ingredients
- 1 Cup Quinoa Flour
- 1 Cup Gluten-Free Baking Flour* (see notes)
- 2 Tsp Baking Powder
- ½ Cup Erythritol (or preferred granulated sweetener)
- 3 Ripe Bananas (mashed)
- ½ Cup Unsweetened Non-Dairy Milk
- 1 Tsp Pure Madagascar Bourbon Vanilla Extract
- ½ Tsp Cinnamon
Instructions
- Preheat the oven to 375°F.
- In a large mixing bowl, combine the flours, baking powder, and granulated sweetener. Mix together.
- Add the mashed ripe bananas, milk, vanilla, and cinnamon. Mix again to form a smooth bread batter.
- Pour the batter into a greased 8x4 loaf pan, smoothing out the top.
- Bake the bread in the preheated oven for 35-40 minutes, until a tooth pick inserted in the center comes out clean.
- Remove, let cool on a wire rack. Store in an airtight container or freeze for later by slicing the bread and wrapping each piece individually.

So simple and with that touch of cinnamon (always!) your taste buds and tummy will be mighty happy! Whether you're planning a Mother's Day breakfast or brunch, just have a craving for some classic gluten-free banana bread, or need to bake up a special treat to add to the kiddo's lunchboxes like my mom used to do for me, this is the only banana bread recipe you need! My family did not know it was so "free-from" and you won't either! The taste, the moist and soft crumb, the perfect banana taste...I need some now...how about you?

Just have to say thank you for making gluten free recipes that are allergen friendly. We eat gluten free but my husband is also allergic to every nut out there :). It makes it difficult to bake when so many recipes use almond flour.

Banana bread is an essential. Gluten-free has nothing to do with eating better. It is a medical diet for celiacs.
