You didn't think I was forgetting about chocolate ones, did you? We are on #5 of my "back-to-school" classic remakes! Just as much as I get requests for classic gluten-free vanilla cupcakes, I get the same amount for classic gluten-free CHOCOLATE cupcakes! I'm a hard sell on vanilla vs. chocolate cupcakes. It's a hard decision. If we're talking cupcakes with frosting, I'd go with vanilla. If we were talking just a slice of cake with frosting, I'd go with chocolate.
Vanilla vs. chocolate is such an intense debate for any category of food. The two classics, but which one is more classic? I've read time and time again that chocolate always reigns supreme over vanilla when the majority (in terms of ice cream) is polled. But then I hear more people vote vanilla when asking personally. Vanilla is much more customizable, but chocolate is so perfectly decadent and satisfying. Honestly, why can't we just do half and half? Better yet, when push comes to shove, let's always make a double batch of whatever we are making. One in vanilla and one in chocolate.
I think it comes down to the fact that I'm much more of a vanilla frosting kind of girl, but a chocolate cake kind of girl too. So I guess the ultimate cupcake would be chocolate cake with vanilla frosting. (This is all in terms of just chocolate and vanilla...don't throw Funfetti or carrot cake into the mix!) One thing that never changes though...sprinkles MUST be included. It's illegal otherwise. That gets to the debate of rainbow vs. chocolate sprinkles. Obviously rainbow...don't argue with me on that one!
You know what else is up for debate? How the cupcake is eaten. Do you peel down the paper and take a big side bite of cake and frosting? Do you lick all the frosting off first and eat the cake last? Or do you eat it in some other savage way like bottom up or top down? Licking all the frosting off first I think is disgusting...no. Just give me a nice simple side bite. I'd be happing with no frosting actually. I'm not a frosting fiend. But licking it all off first? Make me shudder! At least these chocolate cupcakes are gluten-free, vegan, allergy-free, and sugar-free so if you DO have to lick the frosting off first, it isn't so sickeningly sweet and shudder-worthy. But still...you need a bite of ALL the goods for the full happy cupcake experience!
Classic Gluten-Free Chocolate Cupcakes
Classic Gluten-Free Chocolate Cupcakes (Vegan, Allergy-Free, Sugar-Free)

Ingredients
- Cupcake Batter:
- 1 ¾ Cup Gluten-Free 1-to-1 Baking Flour
- ½ Cup Unsweetened Cocoa Powder
- ¾ Cup Erythritol
- 3 Tsp Ener-G Egg Replacer
- 1 Tsp Baking Powder
- ½ Tsp Pure Madagascar Bourbon Vanilla Extract
- 1 ½ Cup + 1 TB Unsweetened Dairy-Free Milk
- Chocolate "Buttercream" Frosting:
- 1 Stick Melt (Vegan Butter)
- 3 Cups Powdered Erythritol
- ¼ Cup Unsweetened Cocoa Powder
- ½ Tsp Pure Madagascar Bourbon Vanilla Extract
- Allergy-Free Sprinklz (to top)
Instructions
- Preheat the oven to 375°F.
- In a large mixing bowl combine all cupcake batter ingredients, adding the milk last. Mix well for a non-clumpy cake batter.
- Line a standard muffin/cupcake pan with 12-14 liners and add about 3 tablespoons of the cupcake batter to each.
- Bake in the oven for 18-22 minutes.
- To make the frosting, soften the butter stick slightly and mix together with the other frosting ingredients until you get a thick, creamy, chocolate frosting.
- Allow the cupcakes to cool and using a pastry bag*, frost the cooled cupcakes. Top with sprinklz to finish.
Notes
*If you don't have a pastry bag, you can use a Ziplock/plastic baggie. Simply fill the bag, snip one corner off, and squeeze the frosting on that way!

I sometimes eat my cupcakes pretty weird. If they are big, I remove the bottom and put it on top and eat it kind of like a cupcake sandwich lolol But anyway, I love how "guilt free" this cupcake is! Definitely need to try this recipe.
