I have really been testing my stomach lately and I am happy ecstatic to report that things have been going pretty well with these "risks". I started by throwing stomach discomfort to the wind and adding a huge frozen bag of broccoli to the veggies I was making for the first few days last week. And I ate those veggies for 3 days in a row with a good amount of broccoli each and every time! And guess what? I wasn't doubled over in intense pain...WIN! Those days I was also eating good amounts of beans and legumes and with the broccoli still added in I seemed to be fine. I also have been going crazy on the acid. Oranges, tomatoes. They bring discomfort still, but not so much that I still can't enjoy it. Slow and steady. And then a few weeks ago and really wanted to test myself. I see all of these wonderful recipes around the web using coffee, especially amazing breakfast dishes. I was dying to make my own warm coffee flavored breakfast for the freezing morning I had been waking up to. So I went to the grocery and bought a cheap small jar of decaffeinated instant coffee granules. I knew I wouldn't be drinking it straight up, I just wanted the flavor in a hot cereal, a.k.a Quinoa Flakes. So I experimented with two new and delicious recipes that did not kill my stomach! I noticed a small increase in the burning and discomfort of my stomach right after I ate it, but it went away and I was fine the rest of the day. So I will continue to make these two recipes, because well, they are really good 🙂
Vanilla Cinnamon Coffee Quinoa Flakes
+ ⅓ Cup of Quinoa Flakes
+ ⅔ + 1TB of Water
+ 1 TB of Vanilla Protein Powder
+ 3 Drops of Vanilla Creme Stevia
+ 1 Tsp of Instant Decaf Coffee
+ 1 TB Chia Seeds
+ 1 Tsp of Cinnamon (plus more for topping!)
Directions:
+ Add all of your dry ingredients to a microwave safe bowl and stir. Then add all the wet and stir until everything is mixed well.
+ Heat in the microwave on high for 2 minutes, remove when done, and top with more cinnamon! Enjoy!
Cocoa Mocha Quinoa Flakes
+ ⅓ Cup of Quinoa Flakes
+ ⅔ Cup + 1 TB of Water
+ 1 TB of Chocolate Protein Powder
+ 1 TB + 2 Tsp of Unsweetened Cocoa Powder
+ 1 Tsp of Decaf Instant Coffee
+ ½ TB Chia Seeds
+ 1 Tsp Cinnamon
Directions:
+ Add all of your dry ingredients to a microwave safe bowl and stir. Then add all the wet and stir until everything is mixed well.
+ Heat in the microwave on high for 2 minutes, remove when done. Enjoy!
The mocha flakes are my favorite, they even beat my pumpkin pie flakes! I just can't get enough. Have I told you how much I love quinoa flakes? They beat oats any day of the week for sure. If you still haven't tried them, well I am giving you these two new variations to try and I want you to try them ASAP. I have been brewing up some other variations to try as well, like Carrot Cake (which I made Monday morning!) and Savory Zucchini Flakes. Keep your eyes open for these in the near future 😉

Well one year my mom and I were driving home at night and we decided to write "loser" on an an apple in Sharpie and throw it into the driveway of someone I didn't like at school. We did it as were were driving by, but I don't know if the apple made it into the driveway with my bad throw out the window, haha, memories!
