The wait is over, my gluten-free friends! Back in August, I teased you with this copycat version of Reese's Puffs cereal and I heard you loud and clear..."No more teasers! We want the recipe!" I had actually planned on sharing this cereal as part of my "back-to-school" series, but since it contains a large dose of PEANUT, it didn't fit with the top-8 allergy-free theme. There are a bunch of "peanut" containing recipes I have that do need to see the light of day on Strength and Sunshine sooner of later!
You may or may not know, but cereal is one of my favorite foods (always has been!). I did make that ultimate gluten-free + vegan cereal list, back in the day (super outdated now!) "Ceriously" cereal is SO good! Although the options are much more limited due to food allergies and celiac, there are still a plethora of delicious ones to devour. I'm still waiting on Cap'n Crunch to be made gluten-free, though...my all time pre-celiac favorite! The only problem with it is that they use contaminated oat flour!
I didn't make copycat Cap'n Crunch (yet!), but my love for chocolate and peanut butter + cereal, lead me to make some Reese's Puff cereal instead! Funny enough, I never really ate Reese's Puffs when I was growing up. I think my brother used to love it, but I can't remember ever really eating it (shocker!) Before the 'ole soy allergy came on and I was just a celiac, I used to CRUSH boxes of Envirokidz Leapin' Lemurs cereal (the organic gluten-free equivalent to Reese's Puffs cereal...but still contains soy). With all that said, the logical next step was a homemade chocolate peanut butter cereal!
I'm not going to "sugarcoat" it, but most breakfast cereals are "dessert". There are 10 grams of sugar in a ¾ cup serving of real Reese's Puffs. Considering ¾ cup is...no way the tiny amount any normal human would eat (except my mom), you're packing in a whole lot of sugar in the morning! That goes for "organic" "healthy brand" cereals as well. Small servings with a whole lot of the sweet stuff. I don't let it bother me too much; cereal is my own "indulgence" (you know how I feel about sugar), but still, something with so much sugar and carbs ends up leaving you starving an hour later.
I'm making everyone happy with this cereal (except no-no peanutters). We are #1 going grain-free with tigernut flour, peanut flour, and cocoa power, #2 sugar-free with good 'ole swerve, #3 high protein, #4 low-carb, #5 easy ingredient list (just some applesauce and baking power to what I've already listen!) Gluten-free, grain-free, vegan, sugar-free, kid-friendly (loved), breakfast magic. Yea...you're going to LOVE this copycat Reese's Puffs cereal!

Ingredients
- Peanut Puffs:
- 1 Cup + 2 TB Tigernut Flour
- ¼ Cup Peanut Flour
- ¼ Cup Erythritol (or preferred granulated sweetener)
- ½ Tsp Baking Powder
- ¼ Cup Unsweetened Applesauce
- Cocoa Puffs:
- 1 Cup + 2 TB Tigernut Flour
- ¼ Cup Unsweetened Cocoa Powder
- ¼ Cup Erythritol (or preferred granulated sweetener)
- ½ Tsp Baking Powder
- ¼ Cup Unsweetened Applesauce
Instructions
- Preheat the oven to 350°F.
- In two separate bowls, mix together the peanut puff ingredients and the cocoa puff ingredients until you form two balls of stiff cereal dough (knead each well to incorporate the flavors throughout the dough).
- Now make tiny ¼ teaspoon sized balls with each of the dough mixtures and place these tiny balls evenly spaced out on a Silpat or parchment paper lined baking sheet.
- Bake the puffs for 10-15 minutes, stirring around every 5 minutes so they don't burn.
- At this point check them for softness and if still soft, bake another 10 minutes, stirring every 5 minutes as before until lightly golden brown and crisp.
- Cool completely before storing in an airtight container.

If you have the perk of little kiddos in the house, I'd suggest getting them to help you form those tiny ball puffs! (It can be a bit tedious!) Just tell them they can have ALL the cereal they want if they help you out! Whether you snack on these gluten-free Reese's Puffs dry or pour a big bowl with some ice cold non-dairy milk (Silk's unsweetened vanilla cashew milk is my jam), you and the fam will be in homemade "copycat" healthy cereal heaven!

These look so good I wish I could eat peanut butter. You are so right about all the sugar in cereal, I very seldom let my kids eat cereal. Now that I am doing daycare I will use cereal once in a while for snacks but not for breakfast. One of my friend's little boy who I use to watch tells his Mom cereal is for snacks, not breakfast since we had it for snack instead for breakfast haha.

Oh wow Rebecca, these look amazing!!! I would never would have thought of making puffed cereal from scratch... or that it was even possible to do it by hand. I've never seen tigernut flour here in the UK, but I'll check online. Do you think it could be substituted with any other flour (it doesn't need to be GF for my family)
