Pumpkin, pumpkin, all the pumpkin! I still can't believe I was pretty pumpkin illiterate just a couple of years ago! I never really ate anything pumpkin except a slice of pumpkin pie on Thanksgiving. Now I am pretty sure pumpkin is one of my favorite flavors and ingredients to cook with. You can use it for anything and everything, sweet or savory! And look at the benefits of this round orange wonder!

Now I know there are millions of Pumpkin Smoothie recipes out there in the blog world, but I still wanted to share my version with you! The more the merrier right? Plus mine is special. Mine is green! I felt bad taking away the beautiful orange color, but I just can't drink a smoothie with out my greens. So not only is this smoothie packed with the benefits of pumpkin, but also the benefits of spinach! Double the nutrient power 😉
Creamy Pumpkin Pie Smoothie
Ingredients: (serves 1)
+ ½ Cup Pumpkin Puree (Frozen) I had a ½ cup frozen in a plastic baggie and just ran it under hot water for a few minutes to thaw it a bit.
+ 2 TB Vanilla Protein Powder
+ ⅓ to ⅓ Cup Water
+ 2 Handfuls of Spinach
+ 1 Tsp Pumpkin Pie Spice
+ ½ Tsp Cinnamon (+ more for topping)
Directions:
+ Place the pumpkin, water, spices, and protein in the blender. Add you spinach last, and then blend baby blend! This smoothie comes out so creamy, it is delicious!
Plus it is green, which makes everything even better 😉 (And no, you don't taste the Spinach!)

I can see from the comments that your pumpkin post is a real hit! I too had a limited view of pumpkin for many years, but now I have a new "passion for pumpkins"--from smoothies to soups to desserts! I just made a great pumpkin smoothie yesterday and now I will have to try your recipe as well. Plus the seeds make a delicious seed milk!

I love making these and sweet potato pie smoothies! I always add spinach - great way to add greens. People are always shocked when you can't taste it! I've also been adding fresh ginger. It's really good for inflammation and digestion.

I know! But so many people still won't give it a try, crazy! I have never tried fresh ginger, but I use the powdered spice a lot 😉

Joy In the Midst of...
I have only dabbled in smoothie making. I think this might be a good way to sneak in some veggies. It will be kind of weird, seeing green, but tasting pumpkin, but I think it's a good way to start increasing my veggie intake. And I do love pumpkin!
