Who doesn’t love a creamy chilled lunch salad sandwich? From chicken salad to chickpea salad, they’re all always such a classic lunch option. We’re taking this one up a few notches though. Nothing classic here, but still all delicious. Picture a combo of black eyed peas, crunchy veggies, sweet grapes, and a creamy curried dairy-free yogurt sauce. You don’t have to picture it, you can see it, and go make it in a few minutes after you read this recipe!
So yummy and of course, stuffed between some good gluten-free bread. This little lunch was made last summer when I was obsessed with using So Delicious coconut yogurt in EVERYTHING. When I had finally gotten my hands on the big containers of the unsweetened yogurt locally, I couldn’t not keep it stocked in the fridge. It sure did, and still does, come in handy. One thing I’ve been dieing to try and make in the kitchen is my own coconut yogurt. I heard using this to make it could work, but I also have this…hm.
We’ll figure it out eventually! Dairy-free yogurt will always be relevant! Apparently what’s also relevant is this little influx of sandwiches I’ve been posting! I didn’t plan it, it just happened. Now that July is over, I can already feel the hurry of the new school year and hectic times for anyone, kids or not, coming. I personally just block it all out until the last minute, but maybe these lunch ideas are some intuit signs that my body secretly knows summer freedom won’t last! Or maybe I just like sandwiches and wraps?
You can also eat this as a cool creamy salad too! Black eyed peas, carrots, celery, and those sweet red grapes all with a curry spiced yogurt twist! Just give me a fork (spoon?) already! There are so many flavors and textures that each mouthful is a burst of yum! You’d never know it’s nice and healthy, nutritious, and super satisfying while still being perfectly gluten-free, vegan, and allergy-free! A plant-based power lunch win!
Curried Black Eyed Pea Salad Sandwiches
- 2 Cups (1 15oz Can) No-Salt Added Black Eyed Peas
- 1 Cup Chopped Celery
- 1 Cup Chopped Carrot
- ½ Cup Halved Red Grapes
- ½ Cup Unsweetened Plain Coconut Yogurt
- ¼ Cup Chopped Fresh Parsley
- 1 TB Diced Shallot
- 1 TB Nutritional Yeast
- 1 Tsp Curry Powder
- 1 Tsp Dijon Mustard
- 1 Tsp Lemon Juice
- ½ Tsp Turmeric
- ½ Tsp Paprika
- ¼ Tsp Black Pepper
- Sandwich Options:
- 4 Gluten-Free Buns
- 8 Slices of Gluten-Free Bread
- 4 Gluten-Free Wraps
- In a large bowl, combine all the prepared ingredients and mix well to coat and combine.
- Chill the salad in the fridge for a few hours before serving as a side dish or sandwiches.
Now isn’t that easy or what? These Curried Black Eyed Pea Salad Sandwiches would be perfect for lunch or dinner and if you keep it just as a cold salad, it would be great to bring to a potluck or cookout!
