How I do with we all had endless morning hours before starting our busy days! My mornings are essential and I’m proudly part of the 4am club! I know most people aren’t willing to take it that far and try to savor every moment of sleep they can. Plus. if you have little kiddos you need to get up and ready for school, the mornings can become a dreaded event. That’s sad! Let’s not make that have to happen anymore!

I’m calling myself out here and telling you how lazy of a child I was! I remember having my momma wake me up for school, I’d go downstairs, sit on the couch while watching TV and telling my momma what I wanted for breakfast! (The bliss of carefree elementary school years!) My poor momma! (My brother would do this too, by the way!) Good thing I wasn’t too demanding. Now, let’s use are time savings hacks to order up some groceries and then make some freezable waffles for a super quick and delicious breakfast, any time, any day, anywhere! I used my favorite Hamilton Beach waffle maker which also yield super fun, dippable sticks (extra awesome for the kiddos!), cooked up a batch, let cool on a wire rack, and then wrapped in wax paper, then a plastic bag, and froze! When you need a quick healthy breakfast, just take one out and either pop it in the toaster oven, toaster, or microwave! (Even lazy kids like me can do it in the nick of time!)

Ingredients
  • 3 TB Gluten-Free All Purpose Flour
  • 2 TB Buckwheat Flour
  • ¼ Tsp Baking Powder
  • ¼ Tsp Baking Soda
  • ¼ Tsp Cinnamon
  • ¼ Tsp Pure Madagascar Bourbon Vanilla Extract
  • ¼ Cup Unsweetened Applesauce
  • 3 TB Water
  • Customize with add-ins:
  • Chocolate Chips
  • Blueberries
  • Raspberries
Instructions
  1. Grease a waffle iron and allow to heat as you prep the waffle batter.
  2. In a bowl, combine all ingredients (optional add-ins) and mix together to form a smooth batter.
  3. Once the waffle iron is heated, pour the batter in and allow to cook as per your waffle iron instructions.
  4. Remove the finished waffle and let cool on a wire rack before wrapping in wax paper and storing in a large plastic bag to freeze. (Repeat process for the amount of waffles you'd like.)
  5. Or eat right away with some pure maple syrup and any toppings you desire!

    When I went gluten-free I really missed my bread, waffles help a lot. I’ve never tried adding applesauce to the batter. Sounds delish!

    Oh we love waffles around here! Although I doubt we would have any left to freeze if I made these, lol. My kids are monsters when it comes to waffles and pancakes. They just keep eating and eating until I literally have to cut them off! They look delicious!

    Ooooooooohhhh!!! These look and sound SO good!! Willow was just asking for waffles the other day – I need to make these for her asap! I’ve heard wonderful things about peapod – I’ll have to look into it! We have a weekly routine though…Willow and I go grocery shopping with my Mom every Monday ☺️ But I order any essentials that I can get cheaper from Amazon or Vitacost!

    Oh my gosh. 4am? To me that’s the middle of the night lol! Do you go to bed early or have your trained yourself to sleep less? I’m definitely not a ‘morning’ person. I probably start feeling awake around 11am lol!
    Those waffles look so yummy! We love making waffles at the weekends as a treat breakfast. I usually blend up a whole apple into the milk as unsweetened apple sauce isn’t so easy to get hold of in our UK supermarkets.

    Rebecca, personally I think this waffle recipe looks very extravagant! On a personal note, I’ve made something very similar for my family and it was a huge hit. Your recipe has a lot of personality!

    I just made a waffle recipe also– but I love that you are using buckwheat and applesauce in these! I love to buy those small applesauce cups for baking– so easy to have on hand!

    This looks so delicious! I tend to skip breakfast a lot because I feel I don’t have time. If I make these and keep them frozen until I need them, it would be a great way to encourage me to eat breakfast! Thanks for the recipe!

    I have started ordering groceries online. I keep a running “cart” going every time I realize I’m out of something I add it to the cart. By the time I need to do an order, it doesn’t take very long at all. I have been wanting to try Peapod, in fact, I just started a cart the other day! oh boy so good!
