Easy Gluten-Free Paleo Tahini Chicken Salad (Keto)

A quick and easy chicken salad without the mayo and full of fresh veggies! This gluten-free and paleo Tahini Chicken Salad is top allergy-free, healthy, delicious, and perfect to add to your meal prep routine! Eat it on its own, in a sandwich, over a green salad; kid-friendly and perfect for school or work lunchboxes!

Are you a meal prepper? Scratch that. Do you want to be a meal prepper? Do you want to have easy, quick, but wholesome options to grab on your way to work or pack in your child's lunchbox? I bet you do, but you're worried about time, taste, and something that the whole family will be able to enjoy multiple times throughout the week. Chicken salad might sound boring and give you flashbacks of mayo-drenched slop. No worries! I have a perfect, ultra-delicious, chicken salad update for you to add to your weekday meal options!

What makes a chicken salad easy and less boring?

A few simple swaps and you'll be on your way to not only "less boring" chicken salad, but gluten-free, paleo, allergy-free, and so easy you'll think you missed a step! So what are the ingredients in this super easy tahini chicken salad? Let's start with the chicken. Tyson® Grilled & Ready® Fully Cooked Oven Roasted Diced Chicken Breast which simplifies any recipe. It's made with 100% natural white meat chicken, no antibiotics ever, and can be found right in the freezer section of your local Walmart! To keep this allergy-friendly chicken salad egg-free, we're ditching the mayo for delicious tahini, one of my favorite substitutes for mayo! Next just add in a whole dose of fresh crunchy veggies like celery, carrots, onion, parsley, and to add a sweet pop to balance the nutty tahini, some raisins will do the trick! Add some lemon juice, garlic, black pepper, and a sprinkle of sesame seeds for good measure!

How do you make tahini chicken salad?

Since your chicken is already fully cooked, just defrost according to package directions and add it to a big mixing bowl. Then chop up all your veggies, add those to the bowl (with the raisins), and then add in the tahini and extra spices! That's it! Chicken salad is something that tastes even better with time, which is why it's a perfect dish to meal prep! Any quick and easy recipe you can make ahead that you know will please the family is a win, right? Store it in the fridge on Sunday night and making lunches won't be a hassle anymore!

How can you use chicken salad?

Another fantastic benefit of meal prepping this Tahini Chicken Salad is that your options for eating it are endless! You can serve it on its own, in a meal prep container like in the above picture, or over a green salad. It's also great in a sandwich on gluten-free bread, bagels, even in tortillas for a wrap! If you have time, get fancy and serve it grilled "panini-style". Chicken salad isn't just relegated to lunches. You can serve some up for dinner too! Add a gluten-free grain or pasta to you hit all your macro and micronutrient needs!

What makes this Tahini Chicken Salad a "better for you" option?

Not only do you get 19g of protein per serving from Tyson Grilled & Ready Fully Cooked Oven Roasted Diced Chicken Breast, but the tahini adds an additional 8 grams of protein per serving to the mix. Tahini also provides a great dose of healthy fats (unlike mayo) and other nutrients like iron and calcium! Any recipe with fresh veggies is obviously a good call (veggies for every meal!) and then depending on how you decide to serve it, you can add some healthy gluten-free whole grains or keep it grain-free and paleo with the salad option or grain-free tortillas!

Ingredients

Scale
  • 22 oz Diced Cooked Chicken
  • 1 Cup Chopped Carrots
  • 1 Cup Chopped Celery
  • ½ Cup Diced Onion
  • ½ Cup Unsweetened Raisins
  • ¼ Cup Chopped Fresh Parsley
  • 1 TB Sesame Seeds
  • 1 Tsp Minced Garlic
  • ½ Tsp Black Pepper
  • ⅔ Cup Tahini
  • 2 TB Fresh Lemon Juice

Instructions

  1. Prepare the chicken according to package directions and add it to a large mixing bowl.
  2. Add your chopped veggies, raisins, and spices to the chicken and mix together.
  3. Now add the tahini and lemon juice. Mix well to fully combine and coat.
  4. Store in the fridge and serve chilled.
