Easy, simple, quick, delicious, healthy, no-fuss...what else could you ask for when you have a busy week looming in front of you? Veggies: onions and peppers, protein: deliciously seasoned chicken, and you choice of carb: corn tortillas, cauliflower rice, etc., you have a complete meal with minimal thought and effort while still packing the flavor! That is exactly what you get with some gluten-free skillet chicken fajitas!
Fajitas are just glorified "deconstructed tacos", aren't they? I guess it depends on how you serve them. I opt for a cassava or corn tortilla. You can also make fajita bowls (like a burrito bowl), or simply served over some other grain, greens, or straight up on a plate. Fajita soup, maybe? It could work! Fajitas are traditionally Tex-Mex grilled skirt steak, but we're making it really easy and keeping it "Strength and Sunshine approved". It's all about the spices and flavors that really make FAJITAS such a fan favorite.
Chicken fajitas have always popped up online, whether it was Pinterest or Facebook, but they are always indicated as one of the best quick and easy weeknight dinner ideas for busy families. I guess so; the leftovers and meal-prep possibilities are really where it's at though! Allowing the chicken to really sock up those spices from the marinade/rub and the flavors for the peppers and onions...glorious! I know it's can't just be me when I say leftovers are always 10x better for 80% of foods, right?
Chicken is something I really love the next day. That's why they always tell you to let the chicken "rest" once it's done cooking. From baked in the oven to grilled, or sautéed. I also get immense joy from heating things up in the microwave...just me? That one may just be me; to each her own! If you're looking to swap out your typical Taco Tuesday with something just a tad different, these easy gluten-free skillet chicken fajitas are perfect for the whole family to enjoy on a busy night...not just for lunches the next day!

Ingredients
- Chicken Spice Rub:
- 2 Tsp Chili Powder
- 1 Tsp Minced Garlic
- 1 Tsp Dried Oregano
- 1 Tsp Dried Cilantro
- ½ Tsp Cumin
- ½ Tsp Smoked Paprika
- ¼ Tsp Black Pepper
- 1 Lime (juiced + zest)
- 1 LB Skinless Chicken Breasts (thinly sliced)
- 3 Cup Sliced Bell Peppers
- 2 Cups Sliced Onion
- To Serve:
- Corn Tortillas
- Paleo Tortillas
Instructions
- Preheat the oven to 375°F.
- Mix together all of the spice rub ingredients in a large bowl.
- Thinly slice the chicken breasts into long strips and add them to the bowl of spices and lime.
- Rub in the spices on the chicken and set aside.
- In a large greased and seasoned cast iron skillet, add the sliced peppers and onions, then add the chicken on top.
- Bake in the oven for 25-30 minutes, until the chicken is throughly cooked through.
- Serve with corn tortillas, cassava tortillas, with grains, veggies, etc.

Simple and easy! Like I said, it is all about that rub and those flavors! Can't you just imagine the delicious "not-so-boring" lunch you could have prepped to bring to work with you the next day(s)?
