My personal favorite chocolate dessert. The humble, simple, classic brownie. Always a no-fail go-to for birthday parties, gatherings, any celebration in general. A glorified chocolate cake you can eat with your hands, so what’s not to love? I realized I didn’t have a classic, thick & fudgy, EASY and simple gluten-free vegan brownie on Strength and Sunshine yet…TRAGEDY! We have some fancy pumpkin peanut butter ones, mini mint brownies, double-stuffed, and that lovely skillet brownie, but not “the classic”.
I have always loved a simple brownie. I’d take them over having a cupcake any day! Even though a chocolate brownie is so “boring” in a sense, you just can’t beat that fudgy chocolate decadence. When I was growing up and we “had to” bring in treats for the classroom on our birthday in elementary school, my mom would always opt for making brownies. It was always the “easiest” thing, she said, since frosting cupcakes could be so “burdensome”.
Well, jokes on her, because I loved brownies 100x more 😉 And they WERE much easier to bring into school without having to worry about frosted cupcakes getting smashed, smeared, and becoming frosted-sadness. However, there was only one condition that had to be abided by when it came to brownies. NO powdered sugar sifted on top. Just like the foodie sin of buttering a muffin; sprinkling powdered sugar on top of perfect brownies in simply unspeakable.
Was it some sad, half-hearted attempt at trying to make the humble brownie “fancy”? I think so…but I was, and still am not, for it. I would look on with scorn at the kids who dared bring in brownies with white dust on top. Was a sleek, crackled, chocolate top not good enough? Brownies, classic, simple brownies are not to be frosted, sprinkled with “the power”, or altered in any way, shape, or form. Just bake, let cool, and cut them into nice even squares. Why make “the easy dessert” more difficult?
And always opt for an edge piece! That is where the magic happens! The extra chewy cooked edges…glory! Meaning the corner pieces were the ultimate in brownie gains. So when you send your little celiac or food allergy child off to school with some of these easy thick & fudgy one-bowl gluten-free vegan brownies (School safe and healthier! Nut & peanut free, dairy-free, egg-free, soy-free too. No oil or sugar, so you won’t be a demonized parent bringing in sweets), leave these brownies untouched, untainted, and simple cut into squares, ready for little hands to gobble up. None of this “fake fancy” powder to ruin the chocolate landscape of the classic brownie.
Easy Thick & Fudgy One-Bowl Gluten-Free Vegan Brownies (Allergy-Free)
- 1 Cup Brown Rice Flour
- 1 Cup Gluten-Free All-Purpose Flour
- 1 Cup Erythritol (or preferred granulated sweetener)
- ¾ Cup Unsweetened Cocoa Powder
- 1 Tsp Baking Powder
- 1 Prepared Bob's Red Mill "Egg" Replacer*
- ½ Cup Unsweetened Applesauce
- 1⅓ Cup Full Fat Canned Coconut Milk
- 1 Tsp Pure Madagascar Bourbon Vanilla Extract
- Preheat the oven to 375°F.
- In a large mixing bowl, whisk together all the dry ingredients.
- Now add the prepared "egg" replacer, applesauce, milk, and vanilla. Mix to combine for a thick brownie batter.
- Spread the batter evenly in a greased 9x13 inch baking pan, smoothing out the top.
- Bake in the preheated oven for 20-25 minutes.
- Remove and allow the brownies to cool completely before cutting into squares (12 large or 16 small).
All jokes aside, as long as you bake these delicious gluten-free vegan brownies, I won’t hate on you too much for however you decide to top them (if you in fact, do). One thing I forgot to mention though…the absolute BEST way to eat a brownie is…with a spoon! I’m not talking about when you decide to heat it up and top with ice cream, but literally just eating a room temperature or cold from the fridge brownie with a spoon…literally brownie bliss. Don’t knock it until you try this method…promise!
