The magic that is a simple, humble, lobster roll. A sandwich that defines New England summers, a Maine namesake, a fast-food comfort dish that's so easy and minimal on ingredients, the quality of the sandwich all comes down to the fresh lobster. A traditional lobster roll just includes, fresh, cold chunks of lobster, mayo, maybe a little chopped celery, scallions, and squirt of lemon juice, served up on a buttered and grilled bun.
Just another reason why #EastCoastBestCoast is a thing. BUT, lobster rolls are far from vegan, gluten-free, or allergy-free (i.e. lobster is a shellfish, meaning a big bad top 9 allergen). This dish is one that can't be missed though, so making some modifications had to happen. I originally was going to swap the lobster for jackfruit, but hearts of palm seems to be the go-to swap for vegan seafood (texture-wise it's perfect). Mayo gets swapped with vegan/soy-free mayo, the glutenness rolls gets swapped with a gluten-free roll, and the butter on that roll gets a nice dairy-free swap. All in all...obviously simple to do!
If you're wondering why I specifically called out Maine in the title for these lobster rolls...let me explain. Two states battle over who claims full rights to the lobster roll in New England territory. Maine (the winner of the #1 spot in the debate) makes their lobster rolls "cold and mayo-dressed". On the flip-side, Connecticut claims a lobster roll should be served "hot and buttered". Just no...Connecticut losses this one. When you think of a lobster roll, don't you only think of a cold version? Yes.
As you can see, a Maine-style lobster roll is the only, most delicious, way to go (or mimic in our case). Even though lobster is considered "fancy" and expensive; the lobster roll is legitimate "fast-food" comfort food in New England where lobster is plentifully here, there, everywhere! That means we're serving these up with a side of potato chips to seal the deal on these sandwiches! A perfect, less than 10 minutes to make, taste of meatless, vegan, allergy-free, gluten-free SUMMER!

Ingredients
- 1 14oz Can Salad Cut Hearts of Palm
- 2 Celery Hearts (chopped)
- 2 TB Chopped Scallions
- ¼ Cup Vegan Soy-Free Mayo
- 2 Tsp Fresh Lemon Juice
- ½ Tsp Dried Tarragon (optional)
- ¼ Tsp Black Pepper
- ¼ Tsp Paprika
- 4 Gluten-Free Hot Dog Buns
- Vegan/Soy-Free Butter (for greasing bun)
- Potato Chips (to serve)
Instructions
- In a large bowl, mix together the cut hearts of palm, celery, scallions, mayo, lemon juice, and spices to coat everything well.
- Chill the "lobster mixture" in the fridge until ready to serve.
- To prepare the rolls, slice each in half, lightly butter the inside faces, and either toast butter side down in a pan or on a grill until golden brown.
- Serve the cold lobster mixture in the toasted buns alongside potato chips, if desired.

It's magic! This is one of those recipes that really surprised me. It's so easy and simple, but my family (hello mom, who has a shellfish allergy in the first place!), literally couldn't get enough! By all means, that's great! This is a "lobster" roll. There are only 3 main ingredients. Mayo, vegan mayo here, is required.
