Curry in a hurry! A quick & easy 10-Minute Coconut Yogurt & Chickpea Curry that’s loaded with veggies, is gluten-free, vegan, & top-8 allergy-free! Served with Ready to Serve Brown Rice & Quinoa cups, this recipe makes a perfect meal for two or prepped for make-ahead lunches!

  1. In a greased cast iron skillet or greased sauté pan, sauté the carrots, broccoli, shallot, and garlic for 5 minutes until slightly softened over medium-high heat.
  2. Add the chickpeas, coconut yogurt, and spices, and sauté for another 5 minutes on lower heat, until the veggies are soft and everything is mixed and warmed through.
  3. Microwave the Ready to Serve Brown Rice & Quinoa cups according to package directions.
  4. To serve, plate one of Ready to Serve Brown Rice & Quinoa cups with half of the curry and repeat for the other serving.
