A healthy and snackable way to enjoy your favorite comfort food! These Baked Mini Gluten-Free + Vegan Mac & Cheese Bites are top 8 allergy-free, super kid-friendly, and act as a great side dish, snack, or even an appetizer recipe for your next gathering! Portable macaroni and cheese is never a bad idea!
Instructions
  1. Preheat the oven to 375°F.
  2. Prepare your mac & cheese and while that's cooking, prepare the egg replacer.
  3. Once the mac & cheese is done, mix in the prepared egg replacer(s).
  4. Grease a non-stick mini muffin pan (24 or 48 cup sheet).
  5. Add about 1 to 2 tablespoons of the sticky mac & cheese to each greased mini cup (you'll have to do 2 batches if you have a 24-cup pan).
  6. Bake the bites in the oven for 10 minutes.
  7. Remove and let cool slightly before removing from pan and serving with your choice of dip.
