First lets start by saying...FIVE days till Christmas, ah! Okay now that that is out of the way I have something to share....SUNCHOKES! O my. Roasted in the oven, beautiful creamy deliciousness. They are more traditionally called Jerusalem Artichokes. But they are these little root like bulbs that have a slightly artichoke taste and can be eaten raw and crunchy in a salad, pureed in soups or mashed, or....roasted in the oven for the greatest thing you will ever put in your mouth since Quinoa Flakes. Haha! I bought them last weekend and just got around to roasted them last night for dinner. I can tell you it was the greatest dinner. You may have seen this yummy spread of roasted sunchokes, purple sweet potato, and a veggie burger on my Instagram. If not here you go!
But now I have to share my quick easy first time Sunchoke "recipe" because you just have to pick some up at the store ASAP! You will not regret it I can guarantee you 🙂
Roasted Sunchokes (Jerusalem Artichokes)
+ 1 lb of Fresh Raw Sunchokes
+ 1 Tsp Garlic Powder
+ 1 Tsp Onion Powder
+ ½ Tsp Black Pepper
Directions:
+ Preheat the oven to 425°F.
+ Rinse your sunchokes and dry them off. They simply cut them into 1-inch pieces (really just cut them into biteable pieces, no need to be precise!)
+ Then line a baking sheet with foil (lightly oiled) and spread your sunchokes out. Add the seasoning and toss with your hands. Spread them evenly out again and place in the oven for about 25-30 minutes.
They should come out slighting golden, creamy, and delicious. If you love potatoes and artichokes, well you are in luck because this is the offspring of a potato and artichoke! This just proves that if you see a random exotic piece of produce int he grocery, pick it up and try it out! Never be scared to try something new because 98% of the time you will fall in love 😉 Well I could go on and on about these but let's get to the Friday Finisher before I Sunchoke you out!

A few things I loved about my week or am grateful for:
+ 186 days I made it through the week without any slip-ups! Yay!
+ My Senior portraits arrived! I am actually really happy with the ones my mom ordered. There were only a few that looked semi-good in the proofs because our photographer was...terrible! But I am happy with how these came out 😉 I can't show you any cap and gown ones just yet. Those stay secret until I actually graduate 🙂
+ Well I am grateful that today is my first official day of WINTER BREAK! Yes! Bring on the relaxation, warm mugs of tea, laziness, and love. Well maybe not the whole break. I do have a list of this I want to accomplish of course 😉 We will see how it goes!
