What is up with this weather! I should just call this the Friday Weather Update instead. I can't take it! There is not SNOW in the forecast for today and tomorrow...I thought it was Spring? The lies we are told. I've been feeling so non-springy that I reverted back to eating winter foods. I actually took the slow cooker out and made a new winter recipe . In a big 3 hour long recipe-update-spree, I reshot tons of recipe and you bet, a bunch of old winter and fall recipes like these pumpkin pancakes! Needless to say, eating Spring foods wasn't working :/
It's also been a pretty hectic week and that isn't stopping yet. I think the rest of April, the rest of the semester, will be pretty go-go-go, deadline, deadline. So we're going to take each day as it comes (and hope that Spring really does arrive...soon!) Happy Friday and happy weekend gluten-free foodies! (Don't freeze if it snows in your neck of the woods!)

How do you always find so many good articles? I love the fermented foods one--I've been trying to eat probiotics every day and I think it makes me feel better, too! Also glad to see that nutrition timing myths are starting to be dropped. All the rules about when and what to eat are too restrictive to apply to everyone!

I had to click through and gaze at those little cupcakes from Monday some more <3 Bummer about the non-springy spring, but hey pumpkin pancakes in April is kinda fun too! I'm very intrigued by that quinoa bread, especially with oat flour involved too! You always find those little GF gems 🙂
