I just love bundt cakes! Whenever I see one I'm always captivated by how beautiful and elegant they look. I'd only ever baked these mini bundts and never owned a big "full-sized" bundt pan. I still don't...yes, even this apple butter bundt cake is not full-size, but half size! It was on sale at Walmart and I knew I had to take that as a sign to bake a bundt cake (even if it was a bit smaller!)
I never felt like investing in a fancy full-sized bundt pan was a great investment for me since I STILL have a hard time seeing myself as a prolific baker and I'm never baking for a crowd. Too bad (as far as I know) we don't have any vintage bundt pans. We never were a "cake" family (an ice cream cake family though, that's for sure!) No shame though; I'm happy with these smaller versions! Just enough and just as beautiful!
Fall and winter are total bundt cake season, if you ask me. That's probably because these next months of the year are ALL about baking. Summer bundt cakes just don't seem like a "thing". We have pumpkin pie, pumpkin cake, apple pie, and now, apple cake!
Bundt cakes need some deep, rich, warming, sweet flavors to complement their beautiful shape and design. With it being apple season, that means it's also apple BUTTER season too. Apple butter is something I keep year-round in my house for sandwiches and such, but using it for a cake, specifically, a bundt cake, seemed like a perfect idea!
Apple butter is richer and sweeter in taste than applesauce, as it's cooked down thick and smooth. As of the day I'm writing up this post, I haven't made my own apple butter just yet...but hope too soon! Need to make a trip to go apple picking and make the apple butter experience super authentic 😉 We still have time; those apples aren't going anywhere and if it starts to get late...I'll just have to blow some money at the grocery instead! (Update...YES I DID!!! Apple Butter coming at you on Wednesday!)
The only way to make an apple butter bundt cake even better is to add some cinnamon! A super easy (sugar-free) cinnamon glaze drizzled over top is just the way to make my heart flutter! As I said earlier, not a big cake baker here. When I went to "glaze" this bundt cake, I literally have to do some Google searching to see how to drizzle it over top. Everything suggested using a spoon and making zig-zag movements or to actually frost the entire top. I didn't want the whole thing covered, so I went with the zig-zaging. Let's just say...I used a fork and I ended up with glaze all over the counter, my shoes, clothes, and the floor. But did I get this gluten-free vegan apple butter bundt cake finished with its cinnamon glaze...yes...yes I did!

Gluten-Free Apple Butter Bundt Cake with Cinnamon Glaze (Vegan, Allergy-Free)

- Preheat the oven to 375°F.
- In a large mixing bowl, combine all the dry cake ingredients, mix together, then add the apple butter and milk and mix to combine for a smooth cake batter.
- Add the cake batter to a greased 3-cup bundt pan and place in the oven to bake for 30 minutes.
- To make the glaze, simply mix together the ingredients in a small bowl until thick.
- Remove the bundt cake once done, remove from the pan and let cool before drizzling on the glaze.
Fall baking is for sure a wonderful thing. Cozy, relaxing, and always smells like happiness (just like this apple fritter bread you'll love too!) It's that cinnamon that always gets me no matter what the baked good is! Now that I'm out of apple butter, I should probably go seriously schedule an apple picking date ASAP. This bundt pan is in for a busy baking season...that's for sure! (P.S. If you double this recipe, you could fill a full size bundt).
