- Gluten-Free All-Purpose Flour
- Baking Powder
- Light Brown Sugar Sweetener
- Cinnamon
- Vanilla Extract

- Unsweetened Applesauce

Best Apples To Use For Muffins
You want to choose an apple that's sweet, firm, and crisp! You don't want to use something like Red Delicious or Macintosh which tend to get mushy when baked! I used a nice firm Fuji apple, other great options would be Honey Crisp, Jonagold, Jonathan, Braeburn, even Gala would do! The sweeter the better though since we're not adding a ton of sugar to these muffins!
How to Make Apple Cinnamon Muffins
This recipe is super simple and perfect to bake with the kids! It just takes about 30 minutes from start to finish!
- Wash, peel, and chop your apples.
- Combine your gluten-free flour, baking powder, sweetener, cinnamon, and mix. Then add in the applesauce, dairy-free milk, vanilla, flax egg, and mix everything together for a smooth muffin batter.
- Gently, fold in the chopped apples last.
- In a small bowl, mix together the cinnamon sugar topping.
- In a lined or greased standard 12-cup muffin tin, divide the muffin batter evenly into the cups, about ยพ full. Then sprinkle the cinnamon topping over the muffins.
- Bake the muffins at 375ยฐF for about 20 minutes. Remove and let cool slightly before transferring to a wire rack to cool completely.
Baking Tips and Storage
- Make sure you peel the apples. The peel won't get soft enough in the batter or quick baking time for these muffins to leave it on!
- Depending on the size of your apple, you'll only need about 1 or 2! Just 1 ยฝ cups worth of roughly chopped apple. You don't need to be precise with the chopping, just make sure they are small enough pieces, ยผ-inch, to mix in.
- Unsweetened applesauce makes these muffins super moist without the need for oil! You can use homemade or a single store-bought 4 oz cup!
- After letting the muffins cool at room temperature on a wire rack, you can store the muffins in a closed container at room temperature for 5-6 days. Storing them in the fridge will give you about 7 days.
- Freeze the baked muffins flat in a freezer bag or container. Once solid, they don't need to be on a flat surface but can be frozen for up to 6 months. Reheat the muffins by thawing them in the fridge, then bringing to room temperature or giving them a quick warm in the microwave
- These muffins are best served slightly warm. About 30 seconds in the microwave is perfect! Slather on some vegan butter or go crazy with a dollop of apple butter!

Instructions
- Preheat the oven to 375ยฐF.
- In a small bowl, mix together the flax and water. Set aside to gel.
- In a large bowl, combine the gluten-free flour, baking powder, sweetener, cinnamon, and mix. Then add in the prepared flax egg, applesauce, milk, vanilla, and mix everything together for a smooth muffin batter.
- Wash, peel, and roughly chop the apple into ยผ inch pieces. Gently fold in the chopped apple to the muffin batter.
- In a small bowl, mix together the cinnamon sugar topping.
- In a lined or greased standard 12-cup muffin tin, divide the muffin batter evenly into the cups and sprinkle the tops evenly with the cinnamon sugar topping.
- Bake the muffins in the preheated oven for 20-22 minutes until a toothpick comes out mostly clean.
- Remove and let cool slightly before transferring to a wire rack to cool completely before storing in an airtight container.

*You may need an extra tablespoon or 2 or milk, depending on how watery your applesauce was.
