These simple and healthy Gluten-Free Apple Cinnamon Muffins are vegan and allergy-free! Loaded with chopped fresh apples, applesauce, and cinnamon, they're a perfect fall breakfast or snack for the family! Topped with a naturally sweet cinnamon sugar mixture, this muffin recipe tastes just as mouthwatering as it smells while baking in the oven!

Instructions

  1. Preheat the oven to 375°F.
  2. In a small bowl, mix together the flax and water. Set aside to gel.
  3. In a large bowl, combine the gluten-free flour, baking powder, sweetener, cinnamon, and mix. Then add in the prepared flax egg, applesauce, milk, vanilla, and mix everything together for a smooth muffin batter.
  4. Wash, peel, and roughly chop the apple into 1/4 inch pieces. Gently fold in the chopped apple to the muffin batter.
  5. In a small bowl, mix together the cinnamon sugar topping.
  6. In a lined or greased standard 12-cup muffin tin, divide the muffin batter evenly into the cups and sprinkle the tops evenly with the cinnamon sugar topping.
  7. Bake the muffins in the preheated oven for 20-22 minutes until a toothpick comes out mostly clean.
  8. Remove and let cool slightly before transferring to a wire rack to cool completely before storing in an airtight container.

Notes

*You may need an extra tablespoon or 2 or milk, depending on how watery your applesauce was.
