These healthy Gluten-Free Banana Sunflower Mini Muffins are so quick and easy to bake! They’re vegan, allergy-free, naturally sweet, and make for a great nut-free school & kid-friendly breakfast or snack! This muffin bites recipe only take 10 minutes, is great for meal prepping, and keeping in the freezer for those busy days!

  1. Preheat the oven to 375°F.
  2. In a large mixing bowl, combine all muffin ingredients, in order and mix well to combine and form a thick muffin batter.
  3. Grease a non-stick mini muffin pan and scoop 1 tablespoon of batter into each mini muffin mold (I got 28 mini muffins out of the batter).
  4. Sprinkle a few extra sunflower seeds on the top of the unbaked muffins (if desired).
  5. Bake the muffins in the preheated oven for 10-12 minutes.
  6. Remove and allow the muffins to cool completely on a wire rack before storing in an airtight container.
