Who doesn't love a big ole' fluffy stack of blueberry pancakes? One of the classic variations of the greatest breakfast foods known to man! Just because they need to be gluten-free, vegan, and allergy-free doesn't mean we have to miss out on this delicious staple either! This recipe will give you THE BEST gluten-free blueberry pancakes; tried-and-true, only 7 ingredients, fluffy deliciousness, and pretty darn healthy too!
Only 7 simple ingredients
I love pancakes because they have that wonderful homemade, comfort food feel, but they don't require (or shouldn't) require many ingredients to make! Even when you need the recipe to be gluten-free, vegan, and allergy-free! Once you have a great base recipe, throwing in any add-ins, like blueberries, is simple and up to you. Plus, an easy recipe like this is sugar-free and oil-free, making it a healthy nutritious way to start the day!
What you need:
- Gluten-Free All-Purpose Flour
- Granulated Sweetener
- Baking Powder
- Unsweetened Applesauce
- Non-Dairy Milk
- Vanilla Extract
- BLUEBERRIES!
Fresh or Frozen Blueberries
The age-old question. Do you use fresh blueberries or frozen blueberries for blueberry pancakes? Well, the simple answer is...EITHER! In the scheme or fluffy gluten-free blueberry pancakes, it won't matter if you use fresh or frozen. The blueberries in the pancakes batter become hot little bursts of fruity blueberries sweetness while the cakes are cooking either way. Some people will tell you to defrost the frozen blueberries first, but It's not necessary.
A simple rule of thumb: use fresh blueberries when they're in season, use frozen when they're not! Blueberry pancakes 365 days a year!
To fold-in or drop?
The other big debate when it comes to blueberry pancakes is to fold in the blueberries to the batter before cooking or to drop them on the batter as you're cooking the first side of the pancake. I am a firm believer in folding the blueberries right into the batter. This yields a better blueberry distribution and won't give you pancakes with blueberries only in the center, but ALL around, everywhere, in your pancakes! Dropping the blueberries directly on the cooking batter makes them stick out, make a messier pancakes experience, and (makes your pan harder to clean!)
How to freeze blueberry pancakes
I'm all for some batch cooking and having a "ready-to-go" stash of pancakes in the freezer! When it's not the weekend, but a busy weekday morning and you still have that hankering for blueberry pancakes, you should still be able to appease the need! While a fresh fluffy stack of piping hot gluten-free blueberry pancakes is ideal, you can put your meal prepping skills to work and make a batch ahead of time. Simply cook the pancakes as normal, but allow them to cool off completely on a wire rack. Using a wire rack ensure they won't get gross and soggy!
Once cool, wrap each pancake individually in wax paper and store them, flat and stacked in a freezer bag, in the freezer. When you first freeze them, make sure you keep them flat so they don't break or get misshapen!
Reheating Instructions:
To reheat frozen blueberry pancakes you may think the microwave is the perfect option. Sure, you can, but you risk ending up with rubbery sadness. Just like you would with a slice of leftover pizza, reheat your leftover or frozen pancakes in the toaster oven! Just pop the cake on the rack (use the reheat setting if you have it or set the oven to 350°F) and allow the pancake to evenly warm and edges to crisp up. Just a few minutes are you'll have a perfect stack of pre-made blueberry pancakes ANY day of the week!
Get the kids involved!
You don't have to slave over a hot pan on Saturday morning without some help! Make it a family event by having the kids do all the mixing and stirring. Vegan pancakes don't have raw egg so that makes kid-cooking even better (and safer!) They will love dropping the blueberries into the batter (and eating them from the carton). You can do the work of plopping the batter down on the hot skillet, flipping, and plating.

More fresh blueberries, pure maple syrup or a natural sugar-free variety. A pat of vegan butter can make your blueberry pancakes seem like a hot bakery blueberry muffin! Let your imagination run wild (chocolate syrup wouldn't be a bad idea either!)

Ingredients
- 1 Cup Gluten-Free All-Purpose Flour
- 1 Tsp Baking Powder
- 2 to 4 TB Granulated Sweetener (or preferred granulated sugar)
- 4 oz Unsweetened Applesauce (scant ½ Cup Applesauce)
- ½ Cup Unsweetened Non-Dairy Milk
- ½ Tsp Pure Madagascar Bourbon Vanilla Extract
- ½ Cup Blueberries (plus more for topping!)
Instructions
- In a large mixing bowl, combine the 3 dry ingredients together and whisk.
- Add the applesauce, milk, and vanilla to the bowl and mix together to form a smooth, slightly thick pancake batter.
- Gently fold the blueberries into the batter.
- Heat a liberally greased non-stick skillet over medium-high heat and once hot, drop ¼ cup of batter down for each pancake.
- Cook the pancakes for 3-4 minutes until you see small bubbles form on the surface and the edges begin to lift, before flipping and cooking the other side for an additional 2-3 minutes. Repeat the process as necessary for the rest of the batter.
- Serve and top your pancakes to your liking!
Notes
- Keep your finished pancakes warm while you finish cooking the rest of the batter, preheat the oven to 200°F and keep the pancakes warm in the oven on a baking sheet.
- To freeze your pancakes, let them cool completely on a wire rack, then wrap each pancake individually in wax paper and store them, flat and stacked in a freezer bag.
- To reheat leftover pancakes, pop them in the microwave or heat them in a toaster oven (or regular oven) at 350°F and allow the pancakes to evenly warm and edges to crisp up.
