Ingredients for Gluten-Free Blueberry Waffles
Just like these gluten-free chocolate chip waffles, we're keeping the ingredients simple and to a minimum!
- All-Purpose Gluten-Free Flour
- Baking Powder
- Baking Soda (the secret to crispiness!)
- Vanilla Extract
- Sweetener of choice
- Applesauce
- Water
- BLUEBERRIES!
Fresh or Frozen Blueberries?
You can use fresh or frozen. Just like blueberry pancakes, if fresh are abundant and in season, go fresh! If they're not, but frozen blueberries are waiting in your freezer, use them. Either way, you'll have an equally delicious blueberry waffle! Since these are waffles and not pancakes, just fold-in the blueberries to the batter before adding the waffle batter to your waffle iron.
How to make healthy blueberry waffles from scratch
Waffles are basically everything you love about a stack of fluffy pancakes, without the work! Sure, you can keep them plain, but why not add some fresh blueberries? Mix together your dry ingredients, add the vanilla extract, and water or non-dairy milk, but just enough to give your waffle batter some movement. Then fold in the fresh or frozen blueberries and plop a scoop on your pre-heated waffle iron. Then, step back and let the waffle maker do all the hard work for you...no flipping required!
The best waffle maker for making frozen store-bought toaster waffles
Hands down, the best waffle maker for that standard "toaster waffle" size is the DASH mini waffle iron! It's so easy to use, clean, and makes perfectly crisp waffles in minutes! You'll get about 4 to 5 waffles per batch if you use this waffle iron. However, I can also recommend my favorite Belgium style (dippable) waffle maker from Hamilton Beach too, if you want the best waffle maker for larger waffles!

Call me crazy, but the blueberries in these homemade waffles do a fantastic job adding the perfect amount of ooey, syrupy, natural sweetness! If you choose to let the blueberries shine in these PACKED blueberry waffles, then you won't be missing out, nor will you be noshing on dry waffles! Easy to freeze and store
You can follow the exact freezing directions I laid out in this gluten-free chocolate chip waffle recipe post! Make a batch or two of this blueberry waffle recipe, let the waffles cool on a wire rack to prevent sogginess, then wrap in wax paper, place them in a big freezer bag and place them in the freezer! Reheat them by sticking them right in the toaster like a normal frozen waffle. If you made a larger-sized Belgium waffle, you can place them in a toaster oven or conventional oven at 350°F and bake the waffles on a lined baking sheet for 10-15 minutes, flipping them halfway through.

Ingredients
- 1 Cup Gluten-Free All-Purpose Flour
- 1 TB Granulated Erythritol (or preferred granulated sweetener)
- ½ Tsp Baking Powder
- ½ Tsp Baking Soda
- ½ Tsp Pure Madagascar Bourbon Vanilla Extract
- ¼ Cup Unsweetened Applesauce
- ¼-½ Cup Water*
- ¼ Cup Fresh or Frozen Blueberries
Instructions
- Grease and preheat your waffle maker.
- In a large mixing bowl, combine all dry ingredients together and mix. Add the applesauce and water and mix again to form a smooth semi-drippy waffle batter.
- Fold in the blueberries last, add addiotnaly liquid if needed.
- If using a mini waffle maker, add ¼ of the batter to the hot waffle maker and allow it to cook before removing and repeating the process for the rest of the batter (a total of 4 waffles). If using a standard waffle maker, add ½ the batter to the hot waffle maker, allow it to cook, and repeat (a total of 2 waffles).
Notes
*If you add more water, you'll get 5 mini waffles. I needed a bit more than ¼ cup to compensate for the large blueberries I used.

Rebecca, I made these today, and they are wonderful!! I did make a change with the sweetener because I'm trying to limit my erythritol intake. So, I used 1 tablesoon of Date Lady date syrup and 1 teaspoon of Date Lady date sugar instead of the erythritol. They are so good and nice and crispy! Thank you for this recipe!!
