This is that time of year where I can share some fun Super Bowl, tailgate, party (Olympics!) recipes to satisfy all your munching needs. I think I’ve only ever watched the Super Bowl, maybe twice, in my life. I’m not a sports person, nor am I a TV/Movie watcher. Combine those and long, drawn out game watching is just not my thing. However, that doesn’t mean I can whip up some mean recipes for the party goers to enjoy.
A flavor iconic to American “game day” eating is…BUFFALO! Buffalo wings, anyone? Or, Buffalo Wild Wings. The namesake sports bar and grill. Well, we’re taking a meatless, heathy approach for our favorite creamy, spicy flavoring. Since pasta is always a delicious option and super easy to whip up before hand to feed a crowd, I think we’re onto something with a BUFFALO pasta salad!
I’ve made this pasta salad now multiple times over the past few months. My brother LOVES Frank’s Red Hot and Buffalo Sauce, so I was making it with him in mind. Call me a sucker for fun gluten-free pasta shapes too and I have to get creative with them! Good ‘ole wagon wheels will never die in the nostalgic childhood fun department! Add a little crunch of celery, creamy coconut milk, and of course, a dash of nooch and there’s an irresistible buffalo pasta salad waiting for you!
Eaten warm or cold, it is delicious! I’m still and forever amazed that Frank’s is vegan and allergy-free. Just when you think there will be some sort of dairy in there, there isn’t (just like Oreo’s). Good thing for us, as we can all enjoy the spicy deliciousness! To some extant. I do love spicy food, but my body doesn’t. Small amounts though…I’ll suffer for!
Serving this up for a crowd is easy. Little bowls or cups with a big hefty scoop of pasta salad and a fork or spoon will be perfect perfect for small bites and appetizers. Of course, once the party is over, you’ll be wanting to whip up another batch to enjoy all throughout the week! Like 10 minutes start to finish, so you won’t be complaining! A healthy, protein-packed, creamy, spicy, gluten-free and vegan buffalo pasta salad? YES, Ma’am!
Gluten-Free Buffalo Pasta Salad
- Cook the pasta according to package directions, drain, and add back to the pot.
- Now just pour and add in all the rest of the ingredients, mix well to coat and combine.
- Top each serving with additional chopped scallions, if desired. Serve warm or cold.
I’ve actually been dieing to share this recipe with you guys for months now. With the holiday season though, it was all things cookies and sweets! Since I’m NOT all about that hyped-up “detox” and “cleanse” culture we all see in January, you’ll never see green juices and smoothies over here! Healthy pasta salads with a KICK are much more my style! So let the social gatherings and sports culture commence! Whether that be the Super Bowl or the upcoming Olympics, this Gluten-Free Buffalo Pasta Salad is JUST what you need to throw an outstanding party!
