I know what you're thinking. "This is crazy! This is too much! I can't handle it!" Don't worry, I KNOW you can handle it. Breakfast is not only the most important meal of the day, but it's also the best, the most fun, the most delicious! At least...it should be. If you don't think breakfast is fun or your struggle with starting the day with a smile, than you're in for a treat (literally!) A perfect breakfast for getting you over that mid-week slump or an easy weekend treat to surprise the kids with that doesn't leave you with a messy kitchen and bowls of batter to clean up!
These gluten-free cinnamon French toast bagel waffles have everything that makes breakfast delicious (minus the pancakes). Maybe if I had made pancake batter bagels? Okay, so we can't have it ALL, but we can come pretty close! I hate making breakfast decisions (why I always have 4 or 5 different cereals in one bowl!), so having a "combination recipe" like this cuts down on any decision fatigue! The only decisions this recipe requires is the toppings, but we'll cross that bridge when we get there...
So what exactly is a "Cinnamon French Toast Bagel Waffle" made of?
I was playing around in my dorm apartment a few years ago when I devised this breakfast creation and have since tweaked it. But all you need is a bagel, some flax eggs, cinnamon, sweetener, and a big 'ole waffle iron! Now, I suggest you make my allergy-free bagels (I made cinnamon raisin ones), but you can use a store-bought gluten-free, allergy-free, vegan bagel like those from BFree Foods or The Greater Knead. I like to go big or go home, but homemade will need some meal prep and this is an "easy quick" recipe!
How do you make Gluten-Free Cinnamon French Toast Bagel Waffles?
Your bagel is acting as your bread slices would in some classic French toast. That's why you'll need some flax egg mixture. From there all you have to do it essentially "toast" the bagel in your waffle iron. Top with ALL the toppings like mini chocolate chips and syrup, more cinnamon and then just serve them up! Super easy and no-fuss, if you ask me! To make these extra fun for the kids, after you "waffle your bagels" you can set them out and create a little topping bar! From jam, to chips,Β sprinkles, dried fruit (like raisins), and fresh fruits! (Because you know, we're all about making breakfast FUN!)
I chose the cinnamon raisin bagel option because...that just adds to the sweet deliciousness factor! If you're not into raisin though, that's okay. Maybe you don't even want syrup and that's okay too! A spread of vegan cream cheese of butter works wonderfully with the cinnamon sweet French toast mixture! These bagel waffles are pretty easy to eat on the go too (as long as you hold off on any syrup!). You can also cut them up for dipping and serve them bento-style in a lunchbox (your kids will be the COOL kids in the classroom with this "breakfast for lunch"!)

Ingredients
- Per Bagel:
- 6 TB Unsweetened Non-Dairy Milk
- 2 TB Milled Flax Seed
- 1 TB Erythritol (or preferred granulated sweetener, optional)
- 1 Tsp Cinnamon
- Β½ Tsp Pure Madagascar Bourbon Vanilla Extract
- 1 Homemade Gluten-Free Cinnamon Raisin Bagel (or bagel of choice)
- Toppings of Choice
Instructions
- Grease and preheat your waffle iron and set aside.
- In a wide bowl, combine the flax and milk. Mix together and allow to gel (about 3-5 minutes).
- Then add the cinnamon, vanilla, and optional sweetener to the flax eggs, mix.
- Slice your bagel in halves and dip each piece in the sweet cinnamon flax mixture, allowing it to soak up some of the mixture, before cooking each half separately in the waffle iron.
- Top the waffled bagels as you'd like before serving.
