The way to my heart? Breakfast. Literally, just serve me breakfast and we can be best friends forever. Just make sure it's carbs and sweetness; no savory please! One of the "homemade" breakfasts my mom would make my brother and I when I was younger was French Toast. She always felt like pancakes were so easy to burn, but French toast was a bit easier.
I remember pouring syrup on and having my mom cut them up into biteable pieces for me. But I also remember them tasting super "eggy" and having the worst full-feeling and stomachache afterward. That's why there shall be no eggs and obviously to no gluten nowadays! Still, the syrup "soggy bread" classic will always be near and dear, don't get me wrong!
Of course, knowing me, I finally needed to look up why French toast was called "French" toast. It started back in the 5th century AD by the Romans and was called "Pan Dulcis". But then it evolved over time and the modern version is supposedly credited to an innkeeper named Joseph French (read about it here). So, it's not French at all, it's Roman and just stale bread dipped in egg and milk, and then fried. I've taken it upon myself to make it "ultra" modern and allergy-free-inize it!
I also made it super easy (and healthy) for all of you mommas to prepare for the kiddos! Since I'm still floundering on being a "child", my recipe development can please both. This French toast you cut up before you even make it in the pan! Super easy and cooks up even quicker! For the allergy-free "egg" mixture, we use chickpea flour and a sprinkle of nooch for that classic taste. A hefty dose of cinnamon, pan-fry, and BAM...Breakfast is served! When it's done, it's all ready to serve at the table with a "pool" of syrup for dipping! This way, if you don't want it "soggy", dipping the individual pieces combats that rather well! Obviously, we all know dippable breakfasts are THE best! What kid doesn't love finger food that's dippable, heck, what "adult" doesn't?

Ingredients
- 4 Slices of Gluten-Free Bread (toasted)
- 2 Tsp Coconut Oil
"Egg" Mixture:
- 1 Cup Unsweetened Non-Dairy Milk
- ΒΌ Cup Chickpea Flour
- 1 TB Nutritional Yeast
- 1 Tsp Cinnamon
- Β½ Tsp Pure Madagascar Bourbon Vanilla Extract
Toppings:
Instructions
- Toast your bread and then cut the slices into cubes.
- In a shallow bowl, combine the "egg" mixture and whisk it together.
- Dump all the toasted bread cubes in the mixture and toss to coat.
- Heat the 2 teaspoons of coconut oil in a pan over medium heat before you all the soaked bread cubes.
- Pan-fry the cubes for about 4-5 minutes until golden brown.

Oh I have fond memories of my dad making this for breakfast. I would actually ask for it as my special Birthday breakfast as it was my favourite thing ever =) As I can no longer tolerate dairy, eggs or gluten - this version suits me better. Sounds super yummy, more grown up, but still fun =)
