Ugh, finally! I hate apple pie! I've never liked it. The gross stale crust and chunks of half-cooked apples with gooey...something strewn about. NOT a fan! So why is there finally an apple pie recipe in front of you right now? Because I made it exactly how an apple pie SHOULD be made so it's actually delicious! Remember this Crustless Pumpkin Pie? A yearly family favorite during the season. So I took that method and made it apple pie instead!
This is basically like "pie-shaped" held-together baked applesauce! Trust me though, it's delicious! If you like apples and you like applesauce, then my gluten-free friends, this dessert is for you! Not icky crust, no chunks of semi-cooked apples (the biggest travesty ever done to apples). If apples are going to be cooked, they must be in the form of applesauce, nothing else!
I've always wanted to be able to enjoy a slice of apple pie during the holidays, but pumpkin was the only one that was bearable growing up. I love apples so much (one of those favorite foods), but o, not pie! Pies are just not very appealing to me. There are so many better desserts out there; heck, if you want pie, just make it in the form of bread! Now, there were a few select pies I enjoyed growing up. My local grocery store's in-store bakery's pumpkin pie and that perfect Costco pumpkin pie in the big white plastic container. Those I could handle and enjoyed during the holidays.
I still never ate the crust though. I would just eat the pumpkin filling...with whipped cream. Does anyone really like pie crust? When you're about to dive into a slice of pie, does anyone really say, "Yay, crust!" I find that hard to believe, it's ALL about the filling. Every time, every pie. Except for these...these are the exception. You know, I have some ideas swirling around in my mind for more "pie" recipes. Maybe I just need to give the genre a chance. Making them more attune to "my style" may fix the pie "dislike" problem.
In the meantime, my crustless pies are just fine! All gluten-free, vegan, allergy-free, smooth and silky, no crusty old crust. Pair it with some of my marshmallow fluff (as faux-whipped cream) or some vegan vanilla ice cream if that's your style. I also topped this little slice of apple "pie" with a drizzle of date syrup for some seasonal color and an extra pop of sweet! All in all, this crustless apple pie is so out there that anyone (#teamnopie) will love. Fall, winter, seasonal, Thanksgiving, Christmas dessert...yes, please! I will gladly accept a BIG slice!

Ingredients
- 2 Β½ Cups Unsweetened Applesauce
- Β½ Cup Gluten-Free All Purpose Flour*
- ΒΌ Cup Erythritol
- 1 TB Psyllium Husk
- 1 Tsp Baking Powder
- 1 Tsp Cinnamon
- Β½ Tsp Pure Madagascar Bourbon Vanilla Extract
- Β½ Tsp Allspice
- ΒΌ Tsp Nutmeg
- Optional Toppings:
- Date Syrup
- Vegan Vanilla Ice Cream
- Homemade Marshmallow Fluff
Instructions
- Preheat the oven to 400Β°F.
- In a large mixing bowl, combine all the pie ingredients to combine for a smooth batter.
- Pour the pie batter into a greased non-stick 9-inch pie pan (dusted with extra gluten-free flour).
- Bake the pie in the oven for 30 minutes. Remove and let cool completely before cutting**.
Notes
*Make it paleo and grain-free by using cassava flour!
**Slices best when 100% chilled. Throw it in the fridge before cutting!

This has NONE of the holiday calories, sugar, and fats either! Might as well just eat the entire thing yourself π (I won't tell!) Also, while this is baking in the oven...do not be alarmed! It will blow up to a huge bubble and that is totally normal and supposed to happen. When you remove it, the bubble will deflate and you'll have this funny little "pie" to chill and then devour! Now it's just up to you...Crustless Pumpkin Pie or Crustless Apple Pie? Me? I'll take both!

I'm not a fan of store bought apple pie, but homemade crust is the bomb, and apples should be cooked before being baked in a pie so they're not half baked. Having said that, I love the creative version of this pie. It sounds wonderful.

Actually, I have always though a well-made crust was the perfect complement to the apple and pumpkin pies my mom used to make. But her crust recipe, which I also used when I made pies, was much better than too many I've eaten which tasted more like cardboard. I just leave those and eat the fillings.
Now we are trying to avoid gluten, so this may be a better choice for us now.

I feel like I need to stick up for crusts lol. I love them but there are people in my family who mostly just eat out the filling so I can appreciate where you are coming from, and it does look yummy even without the crust!
