- Gluten-Free Baking Flour + Baking Powder: A light gluten-free baking flour will give these cake batter blondies the perfect cake texture without being too heavy like an all-purpose. Extra baking powder will give your blondies some added fluffiness.
- Light Brown Sugar Sweetener + Granulated Sweetener: The combination of light brown sugar and a touch of normal granulated sugar are what give your blondies that fudgy chew of a classic brownie bar!
- Vegan Butter: Along with the brown sugar, the melted vegan butter will give these blondies chewiness, buttery fudginess, and structure without having to add any other liquid.
- Flax Egg: To hold your eggless vegan blondies together, you'll need a simple flax egg.
- Vanilla Extract: Vanilla cake calls for vanilla flavor and that comes in the form of some pure vanilla extract!
- Allergy-Free White Chocolate Chips: A fun addition to your birthday cake blondies are some allergy-free white chocolate chips! You can leave these out, but they really do add to the birthday cake vibe.
- Allergy-Free Rainbow Sprinkles: We wouldn't be able to call this recipe Funfetti without the rainbow sprinkles!
How To Make Funfetti Blondies From Scratch
- Mix together the dry ingredients before adding in the melted butter and vanilla.
- Add in your sprinkles and allergy-free white chocolate chips.
- Cut parchment paper to fit and line an 8x8 baking pan.
- Spread the thick blondie batter into the lined pan and add additional sprinkles and white chocolate chips to the top.
- Bake your birthday cake blondies until golden brown.
- Let them cool at room temperature before slicing or pop them in the freezer for a quicker cut!
Baking Tips & Tricks
- You will be adding extra sprinkles and chips to the unbaked blondies before baking, Make sure to lightly press these additions into the wet batter so they stick!
- You can use any shaped sprinkle. Confetti-shaped, long Jimmies, natural-colored or not! For a more vibrant Funfetti look and for colors that won't bleed natural sprinkles and nonpareils are not the best options.
- You must line your baking pan with parchment paper so your blondies don't get stuck in the pan! Make sure the parchment paper strips slightly overhang the edges of the pan so you can easily lift out the baked blondies.
- Don't overbake your Funfetti blondies! Just about 25-30 minutes, depending on your oven. They should be chewy and slightly gooey in the center with golden edges. They will be perfect when the edges rise and the center has sunk a bit and is no longer wet and bubbling.
- Do not try to cut warm blondies! Make sure they have completely cooled before slicing. You can lift them out of the pan with the parchment paper and set them on a wire rack to cool or pop them in the freezer for 10-20 minutes until cooled for a quicker cut. Cutting them slightly frozen is super easy and you will get perfectly clean cuts! I also loved the cold chew of a slightly frozen cake batter blondie!
- I cut 9 blondie bars. You can cut them smaller for a super kid-friendly mini birthday party treat!
Storage & Freezer Instructions
- Blondie bars are great to make ahead of time! Bake them up, allow them to cool, and slice before storing them in the fridge in an airtight container. They are delicious served chilled or let them come to room temperature before serving.
- Store leftover blondies at room temperature in an airtight container for 5-6 days. Store them in the fridge for up to 7-10 days.
- You can freeze these birthday blondies by slicing them into squares and wrapping them individually in freezer-safe paper. Freeze them flat until solid before adding them all to a large ziplock bag or storage container for 5-6 months. Thaw them overnight in the fridge.

Ingredients
- 1 Cup Gluten-Free Baking Flour
- ½ Tsp Baking Powder
- ½ Cup Light Brown Sugar Sweetener (use your preferred light brown sugar)
- 2 TB Granulated Sweetener (use preferred granulated sugar)
- 1 Flax Egg (1 TB Milled Flax Seed + 2 TB Water)
- 1 Stick (½ Cup) Vegan/Allergy-Free Butter (melted, cooled)
- 1 Tsp Pure Madagascar Bourbon Vanilla Extract
- ½ Cup Allergy-Free White Chocolate Chips
- ½ Cup Allergy-Free Rainbow Sprinkles
Instructions
- Preheat your own to 350°F.
- In a small bowl, mix together the flax egg and set it aside to gel.
- In a large bowl whisk together the flour, baking powder, brown sugar, and granulated sugar to combine.
- Add the prepared flax egg, melted and cooled to room temperature butter, and vanilla extract. Mix everything together to form a smooth, thick, and sticky batter.
- Fold in ⅓ cup each of the white chocolate chips and sprinkles to the batter.
- Line an 8x8 square baking pan with parchment paper before pouring the sticky batter into the pan and smoothing it out into an even, thin layer. Press in the leftover white chocolate and sprinkles to the top.
- Bake the blondies in the preheated oven for 25-30 minutes, until the top is just golden brown, but the center is still slightly gooey.
- Remove and let cool slightly before cooling completely in the fridge or freezer, before cutting into 9 squares.
Notes
- You can use any shaped sprinkle you'd like.
- For easy cutting, put the blondies in the freezer for 10-20 minutes before using a sharp knife to cut into desired amount of bars.
- Store leftover blondies at room temperature in an airtight container for 5-6 days or in the fridge for up to 7-10 days.
