There really, really is no other way to celebrate a birthday than FUNFETTI! Colorful, sprinkle-filled everything, please! With June being Birthday Month, here on Strength and Sunshine, that means we must celebrate with the obligatory Funfetti recipe! A colorful batch of homemade gluten-free Funfetti cupcakes is on the docket this year and don't worry, when it comes to easy, quick, delicious cupcakes...you don't even need a birthday to celebrate to bake up a batch!
What you Need to Make Homemade Gluten-Free Funfetti Cupcakes
What I love about Funfetti recipes is that they're so simple! Just a vanilla cake base and SPRINKLES!
- Gluten-Free Baking Flour
- Baking Powder
- Granulated Sweeter
- Powdered Egg Replacement
- Unsweetened Non-Dairy Milk
- Neutral Oil or Melted Vegan/Soy-Free Butter
- Vanilla Extract
- Allergy-Free Sprinkles
Vegan Buttercream Frosting
Whip up a simple easy batch of my vegan buttercream frosting to top these cupcakes and of course, decorate with even more sprinkles!
- Vegan/Soy-Free Butter (I use Melt)
- Powdered Sweetener
- Touch of Unsweetened Non-Dairy Milk
- Vanilla Extract
You may also want to try some vegan cream cheese frosting to give these party cupcakes a little something extra!
How to make Funfetti Cupcakes from Scratch
These are dangerous quick and easy to make (if you catch my drift). Just a few simple steps!
- Preheat your oven to 350ºF.
- Mix together the dry cupcake ingredients, then add the milk, oil, and vanilla extract and mix everything silky smooth.
- Now, fold in the sprinkles and gently mix in to disperse them throughout the batter.
- Fill a lined or greased 12-cup cupcake baking pan and bake the cupcakes for 18-20 minutes.
- While the cupcakes bake, you can whip up the frosting.
- Once the cupcakes have cooled on a wire rack, you can frost the cupcakes and add more sprinkles!
Important Tips and Tricks
- To keep these cupcakes nice and moist, use a neutral-flavored oil (safflower, canola, etc.), melted vegan butter, or you can even try applesauce for a fat-free option. IF you use melted butter, bring it to room temperature before adding it to the cupcake batter (otherwise the sprinkle may bleed and discolor the warmed batter before baking).
- The best sprinkles to use: While I love 100% natural allergy-free sprinkles, for Funfetti, you really want the colors to pop! Dye-free natural colored sprinkles are very muted in their color and pretty ineffective for Funfetti cake (they'd be better just to decorate with frosting with). They also tend to bleed even more into the batter. I've found various generic brands of colored sprinkles that are allergy-free (i.e. soy-free).
- Sprinkle shape: I'd use normal sprinkles for the actual cake, but you can use confetti (the flat-disc ones) for decorating the frosting with!
- Storage: Unfrosted cupcakes can be kept at room temperature, but once frosted you'll need to keep them in a sealed container in the fridge. They'll be best consumed within 7 days.

Are these cupcakes healthy?
Unless you find some sugar-free sprinkles, there will always be some added sugar in Funfetti! BUT, that's what birthdays, celebrations, parties, etc. are all about! These vegan Funfetti cupcakes, however, are low in sugar and sugar-free if you use my always sweetener recommendation of erythritol (Swerve). Ingredients
For the Cupcakes:
- 2 Cups Gluten-Free Baking Flour
- 1 Tsp Baking Powder
- 1 Cup Granulated Erythritol (or preferred granulated sugar)
- 1 Prepared Bob's Red Mill Egg Replacement
- ¾ Cup + 2 TB Unsweetened Non-Dairy Milk
- ¼ Cup Neutral Oil (or melted and cooled Vegan/Soy-Free Butter)
- 1 Tsp Pure Madagascar Bourbon Vanilla Extract
- ¼ Cup Allergy-Free Rainbow Sprinkles
Vanilla Buttercream Frosting:
- 1 Stick of Softened Vegan/Soy-Free Butter (I use Melt)
- 3 Cups Powdered Erythritol (or preferred powdered sugar)
- 1-3 Tsps of Unsweetened Non-Dairy Milk (as needed)
- 1 Tsp Pure Madagascar Bourbon Vanilla Extract
- Additional Allergy-Free Rainbow Sprinkles to decorate
Instructions
- Preheat the oven to 350°F.
- In a large mixing bowl, combine all the dry cupcake ingredients and whisk together. Then add the wet and mix together to form your smooth batter. Fold in the sprinkles last.
- Line or grease a standard cupcake pan for 12 cupcakes. Add about 2-3 tablespoons of the cupcake batter to each mold.
- Bake the cupcakes for 18-20 minutes, until a toothpick comes out mostly clean. Allow the cupcakes to cool slightly before transferring them out of the pan and onto a wire rack to cool completely.
- To make the frosting, combine the softened stick of butter and powdered sweetener in a bowl and cream them together with a hand mixer or stand mixer. Add the milk as needed as well as the vanilla extract, until smooth.
- Add the finished frosting to a pastry gun, pastry bag, or use a knife to frost the cooled cupcakes to your liking.
- Decorate the frosted cupcakes with additional sprinkles.
- Store the finished cupcakes in an airtight container in the fridge for up to 7 days.
