What did I tell you? I am ALL about the gingerbread! This gluten-free gingerbread loaf is yet another recipe I teased you with on Instagram last year (fun fact: I baked it after Christmas!) I felt so compelled to make an actual gingerBREAD. Probably the most uncommon way to enjoy gingerbread; instead, everyone opts for COOKIES (aka "men" or "houses"). The classic soft gingerbread loaf was actually started here in America during colonial times, while the cookies date way back to the Greeks in 2400 BC.
Gingerbread has been around for a LONG time. I guess that's why I always think of "old people", elders, the aging when it comes to gingerbread. That's probably why I love it so much. The "old soul" in my smiles when we break out the gingerbread! Plus the added benefit of this gingerbread recipe is that it's a sweet quick bread/ loaf cake. You know how much I LOVE those!
If we're calling this a loaf cake than that means some frosting is required. Throwing it back to my favorite type of cake, carrot cake, we always have that delicious creamy, sour, sweet (dairy-free) cream cheese frosting! What could possibly be more delicious than a soft gluten-free gingerbread loaf cake with CREAM CHEESE frosting? How about molasses cream cheese frosting! (Similar to those pancakes with molasses yogurt!)
Think of a deep and richly flavored soft slice of dark dreamy cake, slathered in that mildly sweet, full-bodied taste of molasses in a perfect sticky creamy indulgent frosting. Pair that with a mug of piping hot coffee (or tea) as an after dinner, relaxing treat, or some devilishly delicious brunch offering. If you want to really play up those "old soul" vibes, why not invite your lady friends over for a Bridge game and a slice of this gingerbread loaf? (Haha!)
All joking aside, this gluten-free gingerbread loaf is perfect for any cold wintery day during the holiday season when you just need to jumpstart that spark of holiday cheer again! The holiday season always makes you feel good, but it can also make you feel sad. I think that's why we all love to bake so much and enjoy all the cozy foods. You just can't feel sad while you baking (or when there's gingerbread involved!). So turn up those Christmas tunes, heat up the oven, and get to mixing up this incredible loaf!

Ingredients
- Gingerbread Loaf:
- 1 Cup Gluten-Free All Purpose Flour
- 1 Cup Teff Flour
- ⅓ Cup Granulated Sweetener
- 1 TB Psyllium Husk Powder
- 2 Tsp Baking Powder
- 2 Tsp Ground Ginger
- 2 Tsp Cinnamon
- ½ Tsp Ground Cloves
- ½ Tsp Ground Nutmeg
- ½ Cup + 1 TB Unsweetened Non-Dairy Milk
- ½ Cup Unsweetened Applesauce
- ¼ Cup Molasses
- ½ Tsp Pure Madagascar Bourbon Vanilla Extract
Molasses Cream Cheese Frosting:
- ½ Cup Plain Vegan Cream Cheese
- 3 TB Molasses
- 2 TB Powdered Erythritol
- ¼ Tsp Ground Ginger
- ¼ Tsp Cinnamon
Instructions
- Preheat the oven to 375°F.
- In a large mixing bowl, mix together all the dry loaf ingredients to combine. Then add the wet loaf ingredients and mix well to form a smooth, thick batter.
- In a greased 8x4 loaf pan, pour in your batter and smooth out the top.
- Bake the loaf in the oven for 25 minutes, remove and let cool.
- For the frosting, simply allow the cream cheese to soften (you can microwave it for 30 seconds or so), and mix it together with the rest of the frosting ingredients.
- Once the loaf is cool, pour the frosting over the top of the loaf before slicing and serving.
