- Brown Sugar Sweetener: To add a little more moisture and rich sweetness to these waffles just a tablespoon of dark brown sugar or sugar-free brown sugar sweetener is used.
- Gingerbread Spices: Go as heavy on the ginger as you want, you can use a pre-made mix or your own combo of ginger, cinnamon, cloves, and nutmeg.
- Vanilla Extract: A splash of vanilla helps to balance the spices and adds to the warming flavors in these vegan waffles.
- Vegan Buttermilk: Rich and creamy homemade vegan buttermilk add tanginess and moisture to these waffles! It keeps them fluffy and tender. Just use your favorite non-dairy milk and a teaspoon of vinegar.
Ingredient Substitutions
- If you don't have molasses on hand or you don't like it, you can swap in pure maple syrup.

- If using a mini waffle maker, add ¼ of the batter to the hot waffle maker and allow it to cook before removing and repeating the process for the rest of the batter (a total of 4 waffles). If using a standard waffle maker, add ½ the batter to the hot waffle maker, allow it to cook, and repeat (a total of 2 waffles).
Notes
- You'll make more vegan buttermilk than is needed, so you should have a few tablespoons left over.
- To store leftovers: Wrap cooled waffles in paper towels before storing them in an airtight container or Ziplock bag in the fridge for up to 3-4 days. Reheat them in a toaster or larger batches in the oven at 350°F.
- To freeze leftover waffles: Allow your waffles to cool completely to room temperature in a single layer on a wire rack. Wrap them individually in wax paper and place them in a freezer-safe bag or container for up to 6 months.
- To reheat waffles: Take frozen waffles directly from the freezer and pop them into your toaster or, for larger-sized waffles, you can toast them back up in the oven at 350°F for about 10 minutes (flipping halfway through).
