A perfect meal for the whole family and a prime idea for those summer and fall season camping trips! Camping can be difficult with food allergies and celiac disease, but when you have a loaf of gluten-free bread and a grill...at least breakfast will be a no-brainer! - Mix together your vegan "egg" slurry.
- Dip your toasted or stale gluten-free bread in the mixture.
- Grill the dipped slices for 2-3 minutes on each side.
Okay...there is a fourth step and probably the most important...drench it in maple syrup and EAT! (Or is that 5 steps?)
Outdoor or indoor grilling options
I know some of you already have tears in your eyes because you don't have an outdoor grill to use. Have no fear! You have options! You can grill up this French toast right on your typical gas or charcoal grill, but if you want grilled French toast in the winter or you don't have an outdoor grill (apartment living, anyone?) you can use a griddle or grill pan right on the stove! In reality, any type of "grill" you have will do. It's all about getting those beautiful grill marks on the bread anyway!

Ingredients
- 8 Slices of Gluten-Free Bread (lightly toasted or stale)
- 1 Cup Unsweetened Light Canned Coconut Milk
- ¼ Cup Chickpea Flour
- 2 TB Granulated Erythritol (or preferred sweetener, optional)
- 1 TB Nutritional Yeast
- 1 Tsp Cinnamon
- ½ Tsp Pure Madagascar Bourbon Vanilla Extract
Instructions
- Prep your gluten-free bread by lightly toasting it if fresh or leaving it stale, then cutting the 8 slices diagonally (optional).
- In a wide bowl, mix together the rest of the ingredients for the slurry.
- Preheat the grill you'll be using over medium-high heat, oiled or greased well.
- Dip each slice of bread in the slurry mixture until nicely coated before placing the slice directly on the grill grates to cook.
- Cook the French toast slices for 2-3 minutes on each side until it's crisp and has browned grill marks.
- Serve right away with your desired toppings!
