The toasty sweet flavor and aroma of maple will have you jumping out of bed for breakfast! These Gluten-Free Mini Maple Teff Waffles are vegan, top-8 allergy-free, and a perfect single-serve recipe for a cozy start on a cold morning!
What is it about mini things that just makes any food better? Is it the cuteness factor? The magical taste of “mini”? The whimsy of it all? I’m not sure, but I am sure that you’re going to swoon over these mini waffles! I’m all about a nice big waffle, as you know, but when I found this mini waffle maker, I knew my life was about to change (drama!).
I was meandering through TJ Maxx, looking for a new planner for the school year back in August, and I saw this magical little waffle iron. Don’t worry, I did get a planner that day, but I had to get the waffle maker too! I think it was $7 or $8. I love finding those random gems in stores like TJ Maxx and HomeGoods. They have such high turnover on those “one of a kind” novelty items you can’t find in your typical retailer.
I was so excited to test it out and let me tell you, it was magic! The waffles came out perfectly the first time, which is a sign of a quality waffle iron (especially when you’re using gluten-free/vegan batter)! As you can tell, I’m now obsessed! Mini believer! Multiple recipes have happened since and of course some fall-inspired recipes had to show up too!
Not only have I been obsessed with the mini waffle maker, but I’ve also been obsessed with all things MAPLE! It’s such a comforting flavor, during the fall, winter, hell, spring and summer too! We’re all about cinnamon and spice, but maple is a must too. When it comes to breakfast foods, maple-flavored totally wins on those cold chilly mornings! Maple has that deep, kind of nutty, toasty, robust, AND sweet flavor that literally warms the soul.
When I think of maple, I always think of the pioneers people (like Little House On The Prairie) and them draining the sap from the maple trees and cooking it down into rich, sweet syrup. I remember, back in elementary school, learning that they’d pour the sweet syrup over freshly fallen snow that they’d gather in bowls and eat as a winter treat! Pretty sure that would be the “original snow cone”! No snow cones here. For this waffle recipe, we’re using ALL the maple and light toasty teff flour for some wonderful color and gluten-free whole grain goodness!
Mini Maple Teff Waffles
- Grease and heat your mini waffle iron while you prep the batter.
- In a mixing bowl combine all the waffle ingredients and stir to combine a smooth batter.
- Pour half the batter on the heated waffle iron and let cook. Once done, remove and repeat for the other half of the batter.
- Top your mini waffles with pure maple cream, a sprinkle of pure maple sugar, and a drizzle of pure maple syrup!
Single-serve breakfast bliss! I felt the maple and teff played so well together. Both are robust, toasty, and slightly sweet. By the way, if you’ve never had maple cream, you are missing out! It is amazing and takes this mini stack up a notch (if that was even possible!) Okay, I’m hungry now! I’m going to go heat up my waffle maker and whip up a batch…you with me?
