It's a super fun breakfast for kids and adults; eat them in a bowl with milk, syrup, plain, with a fork or spoon! These teeny tiny pancakes will make every morning full of smiles!
I'm not one to follow trends and "get on the bandwagon", but this TikTok #pancakecereal craze...it was made for me and most importantly, this blog. The two greatest breakfast foods...served in one perfect bowl of happiness. CEREAL PANCAKES! Mini pancakes served as cereal. Yes, really. It's so easy to make too, but of course, we had to make our gluten-free, vegan, and allergy-free (otherwise, we'd just have a bowl of tears).
What is pancake cereal?
Teeny tiny mini pancakes served up in a bowl! We're talking fresh hotcakes, so tiny, your cereal bowl and spoon are required! No, it's not baby food, however, kids will go crazy for this breakfast and these mini pancakes would be perfect finger food for babies and toddlers!

What ingredients do you need?
Surprise! You can use your favorite pancake batter recipe and customize the flavor to your liking! To keep things simple, I'm sharing a plain gluten-free pancake batter recipe that you can riff on and customize if you wish (cocoa powder, crushed freeze-dried fruit for a berry flavor, perhaps?)
- Gluten-Free All-Purpose Flour
- Sweetener
- Baking Powder
- Vanilla Extract or Other Flavor
- Applesauce
- Non-Dairy Milk or Water
Cereal Flavor Variation Ideas:
- Chocolate: Add Unsweetened Cocoa Powder
- Strawberry: Add Freeze-Dried Strawberries (crushed to a powder)
- Cinnamon: Add Cinnamon
- Peanut Butter: Add Peanut Powder
- Chocolate Peanut Butter: Add both Cocoa Powder and Peanut Powder
Cooking utensils you'll need:
The easiest way to make these cereal-sized pancakes is with a squeeze bottle. Fill the mini squeeze bottle with your pancake batter and squirt out a small dime-sized (about ¼ teaspoon or so) about of batter on a greased and hot large non-stick skillet. However, if you don't have a squeeze bottle at the ready, you can use a plastic ziplock baggie. Fill the baggie half-way with batter and snip one corner edge off (just like you were going to decorate cupcakes).
How to make gluten-free pancake cereal:
- Gather your batter ingredients and mix everything together in a large bowl, folding in any solid add-ins last. You don't want your pancake batter too thin (it will be a mess trying to flip them and the tiny pancakes will run together) or too thick (the batter will get stuck in your squeeze bottle). Adjust the amount of liquid you add to your batter conservatively.
- Fill your squeeze bottle or plastic bag (only snip the corner of your plastic bag when you are ready to squeeze out the batter!) with the pancake batter and heat a large (you want some breathing room) greased non-stick skillet over medium heat on the stove.
- Once your skillet is hot, squeeze out a small ¼ teaspoon (dime-sized) amount of batter for each cereal pancake. Space them out a bit so none of the pancakes are touching. It's easiest to make straight lines and rows.
- Once you notice the edges of the mini pancakes start to lift and dry a bit, it's time to flip (it's very quick, just about a minute or so)! You can flip each one individually (time-consuming) with a spoon or knife. You can also flip multiple pancakes with a normal silicone spatula. Because the pancakes are so small, you're basically stir-frying them and can get away with just giving them a quick toss (if a few get stuck together, you can easily separate them with a spoon). This is a vegan recipe so no need to worry about undercooked egg!
- After another 30 seconds to 1 minute, the pancakes will be done and you can lift them out of the pan with your spatula.
How should you eat pancake cereal?
- Milk or Syrup? You can use your favorite non-dairy milk, pancake syrup, even a pat of vegan butter! Heck, you can eat them plain as a snack!
- Bowl or Plate? Whichever you'd like! If you're serving these mini vegan pancakes with milk, I'd choose a bowl. If you'd rather have syrup, a plate seems best, but a bowl will work too.
- Spoon or Fork? If you serve them with milk, I'd go spoon (for obvious reasons), if you choose butter or syrup, a fork works great!
Storage and Freezing Tips:
- You can make a batch of these mini pancakes, cool and freeze them flat in your freezer until they are solid, and then add them to a storage bag.
- To reheat them, you can take out the tiny pancakes, place them on a paper towel-lined plate, and let them thaw (or not) in the fridge before heating them in your microwave or toaster oven at 350°F until warm.

Ingredients
- 1 Cup Gluten-Free All-Purpose Flour
- 2 TB Granulated Erythritol (or preferred granulated sweetener)
- 1 Tsp Baking Powder
- ½ Cup Unsweetened Applesauce (or a 4 oz container)
- ⅓ Cup Unsweetened Non-Dairy Milk
- 1 Tsp Pure Madagascar Bourbon Vanilla Extract
Instructions
- In a large mixing bowl, combine the 3 dry ingredients together and whisk.
- Add the applesauce, milk, and vanilla to the bowl and mix together to form a smooth, slightly thick pancakes batter. Fold in any add-ins you choose and adjust the liquid amount you use accordingly.
- Fill a squeeze bottle or plastic bag with the pancake batter and heat a greased non-stick skillet over medium heat on the stove.
- Once your skillet is hot, squeeze out a small ¼ teaspoon (dime-sized) about of batter for each cereal pancake. Space them out a bit so none of the pancakes are touching.
