A French toast recipe that's just a bit more special! Gluten-Free Strawberry Stuffed French Toast that's vegan, allergy-free, and a breakfast loaded with strawberry topping and dairy-free strawberry cream cheese!
I am not kidding you. Creamy, sweet, strawberry overload! Who doesn't love some fresh spring/summer strawberries and who doesn't love some decadent French toast? I don't know, but I'm not a hater and I'm pretty sure you aren't either (if you are, we need to talk). If you still have your concerns about "soggy bread" creations, this will 100% ease that anxiety. You may even choose French toast for a weekend breakfast over pancakes!
So what makes this little gluten-free, vegan, allergy-free, and single-serve breakfast so special (besides all those check marks!)? Well, my friends, this plate of sweet soggy carbs is stuffed with a creamy, dairy-free, strawberry surprise! I love Daiya cream cheese and last summer when I got my hands on the strawberry cream cheese, I just knew it deserved a special recipe; not just slathered on my bagels.
Stuffed between two pieces of "French-Toasted" gluten-free bread! Perfect! Nothing too complicated either. Just 4 ingredients total and a hungry belly is all that's required! Since I workout in the mornings on an empty stomach, I am ravenous for breakfast afterwards. If I have a bad breakfast experience, it just throws off the rest of my day. I need a plate (or bowl) or smiles, not frowns, to start my day in the most positive of ways.
This is guaranteed to be a plate of smiles! Even though I have to make special grocery trips just for this cream cheese, it's worth it! To dig into a plate of sweet strawberry, carby, and cream-cheesey goodness...o, you'll be in love too! You don't even need syrup, but I'm always an advocate for adding more sweetness if so desired. And if you don't have some Daiya strawberry cream cheese, you could use your normal cream cheese and blend up some strawberries into it or you could even use plain (but I don't recommend that. You'd be missing out!)

Gluten-Free Strawberry Stuffed French Toast (Vegan, Allergy-Free)

Ingredients
- 2 Slices of Gluten-Free Bread
- 1 TB Arrowroot Starch
- ¾ Cup Strawberry Puree
- 2 TB Daiya Strawberry Cream Cheese
- Syrup (optional)
Instructions
- Mix together ½ cup of the strawberry puree with the arrowroot in a wide bowl.
- Soak the bread slices in the mixture.
- Spread the cream cheese on one of the soaked slices and place the other slice on top.
- Heat an oiled non-stick pan over medium heat and pan-fry the french toast for about 3 minutes on each side or until golden brown.
- Top the French toast with the remaining ¼ cup strawberry puree and syrup, if desired.

One of my favorite ways to eat strawberries is to make a super simple strawberry chia jam by just warming up strawberries in a pot, mashing them, adding chia seeds and tadaaaaa. so easy and delicious on english muffins.
