  1. Before you begin, roast the chickpeas (according to this method, without spices) and crush in a plastic bag. Spread them in a plate and set aside.
  2. Preheat the oven to 425°F.
  3. In a large food processor, process all ingredients (except the chickpea crumbs), until you get a “chunky” hummus texture.
  4. Form about 18 nuggets (1-2 tablespoons each) with the batter and roll them in the chickpea crumbs.
  5. Place the breaded nuggets on a Silpat or parchment lined baking sheet and place in the oven to bake for 20 minutes. Flip and bake another 5 minutes.
  6. Serve right away or freeze for later.

Notes

*You can use premade chickpea crumbs or gluten-free panko instead.
