That's where roasted red peppers come in! They do all the work in amping up your pasta sauce while still being chockfull of vitamins and nutrients! Sweet and robust, creamy with the addiction of coconut yogurt, and a perfect nutty cheesy twist with some nutritional yeast!
What's in a vegan creamy roasted red pepper sauce?
Only 6 ingredients and that includes a dash of black pepper! So simple and easy; did I mention it was super quick too? All you need is a 10 ounce jar, 1 cup, of roasted red peppers, a ½ cup coconut yogurt (one of those single serve cups will do!), 2 tablespoons of nutritional yeast, 1 teaspoon of minced garlic, 1 small shallot, and about ¼ teaspoon of black pepper!
How do you make the roasted red pepper sauce for pasta?
Since this sauce is no-cook, all you have to do is throw (okay...place) the ingredients in a blender or food processor and blend until smooth! From there just add the blended up sauce directly to you cooked and drained pasta! Once you cook and drain your gluten-free pasta, place it back in the hot pot it was in and pour in the red pepper sauce! Mix everything together and your meal is done!
What gluten-free pasta should I use?
It doesn't really matter. You can use any shaped pasta you'd like and that you have on hand! I chose to use these gluten-free shells (Banza which is chickpea-based and grain-free). Shells are great because they hold all that delicious roasted red pepper sauce. They're like little pockets of sauce that burst in your mouth! Plus, shell shaped pasta is always a kid-friendly favorite!
Can I use this vegan creamy roasted red pepper sauce for anything else?
I think this sauce would be great as a pizza sauce, for chicken, heck, even for a sandwich spread! If you want to get wild, it may be even be a fantastic low-calorie dip too! The possibilities are as wide and far are your mind can dream! So you definitely could double or triple batch the sauce and stick it in the fridge to use throughout the week! Even freeze some in ice cube trays or plastic bags and pop them out when need be!

Ingredients
- 1 8oz Box Gluten-Free Shell Pasta
- Red Pepper Sauce:
- 1 Cup Roasted Red Peppers (1 10oz jar, drained)
- ½ Cup Unsweetened Coconut Yogurt (1 5.3oz container)
- 2 TB Nutritional Yeast
- 1 Tsp Minced Garlic
- 1 Shallot (chopped)
- ¼ Tsp Black Pepper
Instructions
- In a large pot, cook your pasta according to package directions, drain, and add straight back to the pot.
- In the meantime, add all the red pepper sauce ingredients to a blender and blend until smooth.
- Add the blended sauce directly to the hot pasta in the pot and mix together to fully coat and combine.
